You can use any kind of meal, or even just seasoned flour! I don't know about the differences between cornmeals I'm afraid, but why not just try it, and judge the difference for yourself. Part of cooking is often about trying new things, and seeing what works well and what you like.

Catfish is not a extreamly mild fish. It will not matter at all whether you use white or yellow cornmeal. It will taste the same, due to the fish flavor. If you were attempting to fry up some very mild fish (like scrod), then you might notice a very slight taste difference. The biggest difference will be in the color.

Your fish monger was wrong. Defrost the fish all the way. The dusting is the best way. Then make sure your batter is a good consistency. The next tips are very Important: Make sure your oil is the right temp-350 is ideal, don;t let anyone talk you into anything higher OR lower. 350 is he mgic number when it comes to frying. When you add the fish or any wet battered food for that matter hold it in the oil for about 10 seconds before you release it. This helps to seal it up and avoid sticking to fryer element and to other pieces of fish you add later. I use a beer batter and here is my recipe: Beer batter: 1 cup flour 1 palm full salt 1 small pinch salt 1 beer-what ever flavor you normally have around Mix the dry ingredients and the slowly add the beer. It will foam up as you add the beer just keep whisking. The consistency you want depends on how you like your breading, more breading of course a thicker batter and almost a little fluffier. For a thinner crunchier batter then you of course want a thinner batter. I like min a medium thickness. Then dredge the frying food in plain flour first then the beer batter. Gently wipe the tip of the dipped item on the edge of the bowl, it will re-coat as gravity makes it run down and coat perfectly. Lower the food in the hot oil and hold on to it for about 10 seconds, this helps to keep it from sticking to the bottom, other pieces being fried, and the heating element if you a frier. Fry until golden brown and it floats. Drain on paper towels or brown paper bags laid out on a plate or cookie sheet. You can pop them in the oven on warm as you fry all the batches.

The white cornmeal is a tiny bit more subtle in taste, but certainly not offensive. The main difference will be in the appearance...it won't be the golden color yellow cornmeal gives when fried. But, that's not offensive either. Experiment and have fun!!

Just try frying it a lemon garlic butter without cornmeal, it turns out very yummy. You can also top it with pepper, hence blackened catfish fillets.

I used to know some people who just rolled the catfish in plain flour and fried it....something different, anyway (it wasn't bad, I have to admit).
