Please recommend any excellent cooking courses! I did a Thai cooking course a couple of years ago which was sensational and would like to do one again. Any info on prices would also be appreciated.

I would suggest your local college. A lot of them have evening classes in cooking and quite reasonably priced.

I completed The City and Guilds 706/1 "Cooking for the Catering Industry" course about 20 years ago and it was the best thing I ever did. It teaches how and why to use different methods of cooking for different foods (roasting, frying, boiling, steaming, pot roasting etc) and how to make classical sauces starting from stocks. It provides the basic understanding of the principles of classical cooking which are the same throughout the world. It isn´t hard but covers 13 competencies and the theory of cooking. I attended for 22 evenings; 1 hour theory and 3 hours cooking. Try google "city and guilds 706/1"

When I was younger, some of the restaurants in and around St. Louis would let you assist the chef as an apprentice chef. You help prepare food for cooking and assisted the chef while he prepared the dishes. Your were not paid for your time but what you learned was priceless.

So, you may want to approach restaurants in your area that have the cuisine you are interested in, and make a deal.

I don't know what your budget is, but I did a course at a place called Divertimenti, in Central London. It's quite expensive, but I really enjoyed it, and they have lots of courses or one day classes which are specialised for a certain cuisine.

If you have the money and you like fish and seafood then treat yourself to a course at the Rick Stein cookery school in Padstow.
