Interesting question it seems!
If you buy two bottles of the same honey, store them in the same exact place. Use the same amount out of each bottle every day.
Why does one crystalize and the other dosen't ???????

1st-the bottles might be from different lots,meaning different hives.It may crystalises even though it is pure due to glicose and fructose ratios of homey.
2nd-Pure honey crystalises,and adultrated honey does not.

Well the real question should be why are you using 2 diferent botles of honey if they are the exact same type? Why not just use one bottle until it's empty and then use the other one. As for the honey crystalizing, you could have gotten some moisture in the bottle somehow. If you really want to know go to foodnetwork.com
