Typically eat quite healthily and am trying to save money so will not be dining out tonight. I'm happy to shop for fresh ingredients so any recipies for a good fish/white meat dish would be very welcome. Thanks

Healthy and yummy...hope you like:

Salmon steaks with Cucumber sauce-
4 salmon steaks (1 inch thick)
2 TBS oil
3/4 c peeled, seeded and chopped cucumber
1/4 c finely chopped celery
2 TBS chopped green onion
2 TBS flour
1 tsp instant chicken bouillon granules
1/8 tsp pepper
1 c half-and-half
1 egg yolk, slightly beaten

Set oven to broil (or 550) and place salmon steaks on broiler pan. s&p. Broil 3-4 inches from heat, 10-15 min, or until fish flakes easily with fork, turning over once.
Meanwhile, heat oil in small saucepan. Add cucumber and celery. Saute until crisp tender. Add onion, saute 30 seconds longer. Stir in flour, bouillon, and pepper. Blend in half and half. Cook stirring constantly, 5-7 min or until thickened and bubbly. Blend small amount of hot mixture into egg yolk. Add back to how mixture. Cook, stirring constantly, 1 min. Serve with Salmon.

Fish Rolls Primavera-
1 c carrots, shredded
1 c zucchini, shredded
2 TBS onion, finely chopped
1/2 c breadcrumbs
1/8 tsp thyme leaves
1/4 c butter, melted
4 fish fillets

Preheat to 375. Combine veggies, breadcrumbs, and thyme. Combine butter and lemon. Add 1/4 c to veg mixture. In shallow baking dish, place equal amount veggie mixture on each fillet; roll up. Pour remaining butter over fillets. Bake 15 min.

Curried Red Snapper-

1-1/2 pounds fresh or frozen red snapper, cod, haddock or flounder fillets
2 medium onions, chopped
2 celery ribs, chopped
1 tablespoon butter
1 teaspoon curry powder
3/4 teaspoon salt
1/4 cup milk


Place the fish in a greased 13-in. x 9-in. x 2-in. baking dish. In a skillet, saute onions and celery in butter until tender. Add curry powder and salt; mix well. Remove from the heat; stir in milk. Spoon over fish. Bake, uncovered, at 350° for 25 minutes or until fish flakes easily with a fork.

Get some chicken breast and put it in a casserole dish. Put some swiss cheese over the chicken. Mix 1/2 cup of butter with some stuffing (your pick) and pack it on top and around the chicken. Pour one family size cream of chicken can over it all and bake at 350 until done.

It's so simple but so yummy!

Chinese Walnut Chicken
Chicken breasts strips are stir-fried with scallions, ginger and garlic, and seasoned with bourbon and soy sauce.Ingredients:
• 1 teaspoon cornstarch
• 1 Tablespoon water
• 1 egg white, beaten
• 4 skinless, boneless chicken breasts, cut into one-inch cubes
• 3 Tablespoons soy sauce
• 1 Tablespoon bourbon
• 1/2 teaspoon sugar
• 4 Tablespoons oil
• 3 whole scallions, cut into 2-inch slivers
• 2 slices fresh ginger, minced
• 1 medium garlic clove, minced
• 3/4 cup coarsely chopped walnuts
• Hot cooked rice
Method:
In a bowl, mix together cornstarch, water and egg white. Add chicken and toss until thoroughly mixed. In a small bowl, combine soy sauce, bourbon and sugar. Set aside. Heat a wok or large heavy skillet over high heat until a drop of water "skittles" across and evaporates immediately. Add 2 Tablespoons of oil, swirl, and add chicken. Quickly stir-fry 3 to 5 minutes or until no pink shows. Quickly remove from pan and set aside. Reduce heat to medium-high and add the remaining oil to pan. Add scallions, ginger and garlic; stir-fry for 1 minute. Return chicken to pan. Add soy sauce/bourbon mixture and cook, stirring, about 1 minute. Stir in walnuts, mix well and serve with hot cooked rice.

Ahi tune. with a white wine lemon caper sause. asperagus and some wild rice if the sause is a little too rich some ginger and shallots sauted in white wine is nice on the fish

Why dont' you grill some fish, salmon for example, with some scallops, garlic, wine sause, and then some rizoto or pasta. If not some fresh veggies will do. Man I'm hungry...

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

How about grilled chicken with mashed potatoes with some carrots and other veggies...That's what I usually have!
