Best Brownies
INGREDIENTS
1/2 cup butter
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
3 tablespoons butter, softened
3 tablespoons unsweetened cocoa powder
1 tablespoon honey
1 teaspoon vanilla extract
1 cup confectioners' sugar
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.
In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
Bake in preheated oven for 25 to 30 minutes. Do not overcook.
To Make Frosting: Combine 3 tablespoons butter, 3 tablespoons cocoa, 1 tablespoon honey, 1 teaspoon vanilla, and 1 cup confectioners' sugar. Frost brownies while they are still warm.
Deep Dish Brownies
INGREDIENTS
3/4 cup butter, melted
1 1/2 cups white sugar
1 1/2 teaspoons vanilla extract
3 eggs
3/4 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon salt
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease an 8 inch square pan.
In a large bowl, blend melted butter, sugar and vanilla. Beat in eggs one at a time. Combine the flour, cocoa, baking powder and salt. Gradually blend into the egg mixture. Spread the batter into the prepared pan.
Bake in preheated oven for 40 to 45 minutes, or until brownies begin to pull away from the sides of the pan. Let brownies cool, then cut into squares. Enjoy!
Brownie Biscotti
INGREDIENTS
1/3 cup butter, softened
2/3 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1/3 cup unsweetened cocoa powder
2 teaspoons baking powder
1/2 cup miniature semisweet chocolate chips
1/4 cup chopped walnuts
1 egg yolk, beaten
1 tablespoon water
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Grease baking sheets, or line with parchment paper.
In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, cocoa and baking powder; stir into the creamed mixture until well blended. Dough will be stiff, so mix in the last bit by hand. Mix in the chocolate chips and walnuts.
Divide dough into two equal parts. Shape into 9x2x1 inch loaves. Place onto baking sheet 4 inches apart. Brush with mixture of water and yolk.
Bake for 20 to 25 minutes in the preheated oven, or until firm. Cool on baking sheet for 30 minutes.
Using a serrated knife, slice the loaves diagonally into 1 inch slices. Return the slices to the baking sheet, placing them on their sides. Bake for 10 to 15 minutes on each side, or until dry. Cool completely and store in an airtight container.
Cheesecake Topped Brownies
INGREDIENTS
1 (21.5 ounce) package brownie mix
1 (8 ounce) package cream cheese, softened
2 tablespoons butter, softened
1 tablespoon cornstarch
1 (14 ounce) can sweetened condensed milk
1 egg
1 teaspoon vanilla extract
1 (16 ounce) container prepared chocolate frosting
DIRECTIONS
Preheat oven 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
Prepare brownie mix according to the directions on the package. Spread into prepared baking pan.
In a medium bowl, beat cream cheese, butter and cornstarch until fluffy. Gradually beat in sweetened condensed milk, egg and vanilla until smooth. Pour cream cheese mixture evenly over brownie batter.
Bake in preheated oven for 45 minutes, or until top is lightly browned. Allow to cool, spread with frosting, and cut into bars. Store covered in refrigerator, or freeze in a single layer for up to 2 weeks.

1 cup white sugar
1 teaspoon vanilla extract
2 eggs
1/2 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped walnuts
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking pan.
In a medium bowl, mix together the oil, sugar, and vanilla. Beat in eggs. Combine flour, cocoa, baking powder, and salt; gradually stir into the egg mixture until well blended. Stir in walnuts, if desired. Spread the batter evenly into the prepared pan.
Bake for 20 to 25 minutes, or until the brownie begins to pull away from edges of pan. Let cool on a wire rack before cutting into squares.
Michelle's Peanut Butter Marbled Brownies
INGREDIENTS
2 (3 ounce) packages cream cheese, softened
1/2 cup peanut butter
1/4 cup white sugar
1 egg
2 tablespoons milk
1 cup butter or margarine, melted
2 cups white sugar
2 teaspoons vanilla extract
3 eggs
3/4 cup unsweetened cocoa powder
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup semisweet chocolate chips
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking pan.
In a medium bowl, beat cream cheese, peanut butter, 1/4 cup white sugar, 1 egg, and milk until smooth. Set aside.
In a large bowl, mix together melted butter, 2 cups white sugar, and vanilla. Mix in the remaining 3 eggs one at a time, beating well after each addition. Combine flour, cocoa, baking powder, and salt; mix into the batter. Stir in chocolate chips.
Remove 1 cup of the chocolate batter. Spread the remaining batter into the prepared pan. Spread the peanut butter filling over the top. Drop the reserved chocolate batter by teaspoonful over the filling. Using a knife, gently swirl through the top layers for a marbled effect.
Bake in preheated oven for 35 to 40 minutes, or until a wooden toothpick inserted near the center comes out almost clean. Cool completely, then cut into bars.

OK so its pretty weird but the bestrecipe I have ever used for brownies came from a kids cookbook I bought at a yard sale for my daughter. Personally I am not a brownie eater, but when we make these I have to put them in an out of the Way place so they last. Here it is:
Disgustingly Rich Brownies
Preheat oven to 350 degrees and grease 8" or 9" pan with shortening. Melt 2 sticks(1 cup) butter over low heat. In mixing bowl stir together 3/4 c. cocoa and 2c. sugar. Then stir in melted butter. Add 4 eggs and 1tsp vanilla extract, stir again. Now add 1 1/4 c. flour and 1/4 tsp salt and mix until just smooth (not too much). If you'd to add walnuts in this step, we never do. Spread evenly into pan and bake until the brownies begin to pull away from the side of the pan (or until a toothpick comes out clean) about 40-50 min. Let cool before cutting. The greatest part about this recipes is that the edges don't get too hard to eat, I always have that problem with the mixes.

Cheesecake Brownies 1 (19.8 ounce) package brownie mix 1 (8 ounce) package cream cheese 1 egg 1/3 cup white sugar Prepare the brownie mix as directed by manufacturer. Preheat oven to temperature indicated on box. Grease a 9x13 inch pan. Spread the brownie batter evenly into the prepared pan. Using an electric mixer, beat together the cream cheese, egg and sugar until smooth. Dollop the cream cheese mixture on top of the brownie batter. Swirl together using a knife or skewer. Bake according to manufacturer's instructions. Brownies will be done when a toothpick inserted comes out clean. Cool in the pan, then cut into bars and serve.

Disgustingly Rich Brownies
Yield: 16 brownies
Ingredients:
2 cubes (1 cup) butter
3/4 cup cocoa powder
2 cups sugar
4 eggs
1 teaspoon vanilla extract
1-1/4 cups flour
1/4 teaspoon salt
1/2 cup chopped walnuts (optional)
Preparation:
Preheat your oven to 350 degrees, then smear the inside of an 8 or 9-inch baking pan with shortening.
Melt the butter over a low heat. Watch it. It’s easy to burn.
In your mixing bowl, stir the cocoa and sugar together. Then stir in the melted butter. Add the eggs and vanilla, and stir again. Now add the flour and salt, and mix just until smooth. Not too much. (If you’re adding walnuts, now’s the time.)
Scrape the mixture out into the greased pan and spread out in an even layer.
Bake in a 350-degree oven until the brownies just begin to pull away from the sides of the pan (or until you can stick a toothpick in and pull it out with no batter sticking to it). Takes about 60 to 65 minutes. Let cool before cutting.

Basic Brownies:
1 cup butter or margarine
4 (1-ounce) squares unsweetened chocolate
4 large eggs
2 cups sugar
2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon vanilla extract
1 1/2 cups chopped walnuts or pecans (optional)
Créme De Menthe Frosting
Chocolate Glaze
Microwave butter and chocolate squares in a 1-quart microwave-safe bowl at HIGH 2 minutes or until both are melted, stirring once.
Beat eggs at medium speed with an electric mixer; gradually add sugar, beating well.
Add flour, salt, and vanilla, beating well. Stir in chocolate mixture, and, if desired, chopped walnuts. Pour batter into a lightly greased 13- x 9-inch pan.
Bake at 325° for 40 to 45 minutes. Cool in pan on a wire rack. Spread with frosting, if desired, and cut into squares.
Raspberry Brownies: Fold 1 cup fresh raspberries into Basic Brownies batter; pour into pan. Melt 1/2 cup raspberry jam; drizzle over batter, and swirl with a knife. Bake as directed. Sprinkle with sifted powdered sugar; cut into squares. Garnish with fresh raspberrries and raspberry leaves, if desired.
NOTE: For added interest, stir 1 cup of any of the following ingredients into Basic Brownie batter: butterscotch, peanut butter, semisweet or white chocolate morsels; candy-coated chocolate pieces; chopped candy bars or caramels; almond brickle chips; dried cherries. Bake as directed.
Yield: Makes 2 1/2 dozen

This could be considered cheating, but they are extra fudgy good.
Get a box of double fudge brownie mix, a bag of chocolate chips, and Kahlua. Make the mix per the box instructions, then add a bag of chocolate chips and 1/4 cup Kahlua. Bake as directed.
Ooey-gooey but excellent!
This was my recipe, but someone else won a baking contest at Copia with the exact same one!
