Blood can from His heart because that's what runs through the heart.
Water came out also, because the heart is encased in the precardial sac, which is fill with clear fluid.

at the time even Jesus's followers did not consider him to be a demigod or half man/half god, all man/god being

Because it made for a better story. It makes him seem more mystical and such. It would be harder to get converts with mundane main characters.
Either that, or the people back then really didn't know much about human anatomy and were crudely describing bile and blood.
