Orange Apple Cake
Original recipe yield: 1 -10 inch tube pan.
INGREDIENTS:
3 apples - peeled, cored and sliced
5 tablespoons white sugar
2 teaspoons ground cinnamon
3 cups all-purpose flour
3 teaspoons baking powder
2 cups white sugar
4 eggs
1 cup vegetable oil
1/2 cup orange juice
2 1/2 teaspoons vanilla extract
1/2 teaspoon salt
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 10 inch tube pan.
Sprinkle sliced apples with 5 tablespoons white sugar and the ground cinnamon. Toss to coat and set aside.
Mix the flour, eggs, 2 cups sugar, baking powder, salt, vegetable oil, orange juice and vanilla until well blended. Batter will be fairly stiff.
Pour 1/2 of the batter into the prepared pan. Place the apple mixture over the batter then pour the remaining batter over the top.
Bake at 350 degrees F (175 degrees C) for 60 to 80 minutes. Let cake cool in pan.

Apple Cake with Caramel Glaze:
1 1/2 cups (3 sticks) unsalted butter, at room temperature, plus more for the dish
1 cup granulated sugar
1 cup light brown sugar
3 eggs
3 cups all-purpose flour, plus more for the dish
1 teaspoon baking soda
3 teaspoons ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon kosher salt
5 Granny Smith apples, peeled, cored, and cut into a 1/2-inch dice
1 1/4 cups coarsely chopped pecans
2 1/4 vanilla extract
Caramel Glaze (optional)
Vanilla ice cream (optional)
Heat oven to 325° F.
In a large bowl, using an electric mixer on medium-high, beat the butter and the granulated and brown sugars until light and fluffy, 3 to 5 minutes. Add the eggs, one at a time, beating after each addition. In another bowl, combine the flour, baking soda, cinnamon, nutmeg, and salt. Using a wooden spoon, gradually add the flour mixture to the egg mixture. The batter should be very thick. Stir in the apples, pecans, and vanilla. Scrape the batter into a buttered and floured 9-by-13-inch baking pan. Bake until a toothpick inserted in the center comes out clean, 50 to 60 minutes. Transfer to a wire rack. Let cool for at least 10 minutes while you make the Caramel Glaze, if using.
With a spatula, loosen the sides of the cake. If you want to remove it from the pan, invert it onto a baking sheet, then invert it again, right-side up, onto a platter. With a toothpick or fork, poke holes all over the surface. Pour on the warm sauce. Serve warm or at room temperature, with ice cream, if desired.
Tip: This rich, moist cake travels exceptionally well in its baking pan.

Apple Cider Pound Cake
(12 servings)
3 c Sugar
1 1/2 c Butter or Margarine
6 Eggs
3 c Flour; All-Purpose
1/2 ts Salt
1/2 ts Baking Powder
1 ts Cinnamon; Ground
1/2 ts Allspice; Ground
1/2 ts Nutmeg; Ground
1/4 ts Cloves; Ground

ICING:

1/4 c Butter or Margarine
1/4 c Buttermilk
1/2 ts Vanilla Extract
1/4 ts Baking Soda
In a large mixing bowl, cream sugar and butter. Add eggs, one at a time, beating well after each addition. Stir together all dry ingredients; set aside. Combine cider and vanilla. Add dry ingredients alternately with cider mixture to batter. Mix until well blended. Spoon into a greased 10-inch angel food cake pan or fluted tube pan. Bake at 325 degrees F for about 1 hour and 10 minutes or until cake tests done. Meanwhile, combine all icing ingredients in a saucepan. Bring to a boil; reduce heat and simmer 10 minutes. While cake is warm, drizzle 1/3 of the icing over the cake. Serve remaining icing over individual cake servings, if desired. YIELD 12-16 servings.

If you want one that is VERY easy and simple, here ya go:
1 box white cake mix
1 can apple pie filling (or a pint of your own filling)
2 eggs
Mix all together by hand. Spread in a 9X13 well greased pan and bake 30-35 minutes or until knife comes out clean. For topping drizzle mixture of 1 cup powdered suger, 1 1/2 tbsp milk and 1 tsp vanilla over the warm cake. Allow to cool completely before cutting. Just as good as something from scratch but a lot easier and YUMMMYYYYY!

FRESH APPLE CAKE
2 cups flour
2 teaspoons baking soda
2 cups apples, pared, cored and quartered
1/4 cup Crisco
1/4 cup butter, melted
1 cup sugar
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon vanilla extract or 1 tablespoon dark rum
1/2 teaspoon nutmeg
1/4 teaspoon ground ginger (or 1 teaspoon freshly grated)
1/4 teaspoon ground cloves
1 cup raisins
1 1/4 cups whole pecans
Preheat oven to 350F degrees.
In the bowl of a food processor, process pecans very briefly by pulsing twice to leave nearly whole pieces. Add 1 cup peeled and cored apple pieces along with salt, sugar, vanilla, baking soda, cinnamon, nutmeg, ground cloves and ginger. Process briefly so that chunks remain. Add second cup of apples, processing one pulse only. This provides two different consistencies for the apples. Add raisins and melted butter. Pulse once.
Add flour and process only until combined; some lumps will remain.
Turn into a well greased and floured (or use Baker's Joy) 9x9x2 inch baking pan.
Variation: May add up to 1/2 cup coarsely chopped apples and nuts to top before baking. Keep the layer of apples and nuts light so it won't stop cake from rising.
Bake 40 to 50 minutes or until a toothpick inserted in center comes out clean.
Serve with whipped cream flavored with a little vanilla or rum and a sprinkling of cinnamon sugar.

Aunt's Apple Cake
Preheat oven to 350 degrees F

5 teaspoons cinnamon
5 teaspoons sugar
Mix and Set Aside
2 cups sugar
3 cups flour
3 teaspoons baking powder
1 teaspoon salt
Mix dry ingredients
1 cup oil
4 eggs
1/2 cup orange juice
1 teaspoon vanilla
Mix together and add to dry ingredients
Grease a tube pan
Pour 1/2 batter over bottom
Spread apple mixture in next
Cover with remaining batter
Bake 1 hour at 350 degrees F

Although any variety of apple works in this cake, I like to use a combination of varieties, particularly Golden Delicious, Criterion, and McIntosh.
4 cups diced apples (I like to use 4 1/2 to 5 cups)
2 cups sugar
1/2 cup salad oil
1 cup chopped nuts (pecans or walnuts)
2 eggs, well beaten
2 teaspoons vanilla
2 cups flour (general purpose, not self rising)
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
Heat oven to 350 degrees. Mix apples and sugar thoroughly. Add oil, nuts, eggs and vanilla. Mix dry ingredients together and add to apple mixture. Bake in a greased 13x9 inch pan for 1 hour.
Note: Baking times on the apple cake can very greatly, especially depending on pan size, pan type (glass, metal, etc.), weather conditions, and oven temps. I don't know if elevation can affect baking times, but it might (I'm at sea level). Although 1 hour is the norm for me in the Seattle area, you may need to take it out earlier. I usually start watching it around 45 minutes -- it should pull away slightly from the edges and be dry on those edges, but still soft in the middle. This is one cake that a little bit underdone is better than cooking it too long and drying it out.
Server frosted or unfrosted. This cake is one of those that you can pretty much finish and serve however you like. If you want to frost it, a sour cream frosting is very nice. Whipping cream or ice cream go very well with it, too. My favorite way to eat it, though, is with no frosting at all.

INGREDIENTS
1 recipe basic eggless sponge cake batter (refer eggless cakes)
2 apples, peeled, cored, sliced thinly
1 apple grated coarsely
2 pinches cinnamon powder
1 tbsp.soft brown sugar
1/2 cup icing sugar
2 tsp. hot water
METHOD:
Either use an 8” oval or round ring mould.
Or use a round or oval cake tin and small metallic glass.
Grease tin, line with greased butter paper.
If using glass, grease, place inverted in center of tin.
Arrange slices of apples all over base.
Mix cinnamon in brown sugar, sprinkle over apples evenly.
Fold in grated apple into cake batter.
Pour into prepared tin, tap gently to release any air bubbles.
Bake in preheated oven at 200oC for 10 minutes.
Reduce thereafter to 170oC-180oC for 30-35 minutes, till done.
It should leave sides of tin, and a skewer inserted should come out clean.
Remove, keep aside for 15 minutes to cool.
Carefully invert it onto a cake plate.
Peel off greasepaper, cool to room temperature.
Beat icing sugar with very little hot water, till a paste is formed.
Drizzle randomly over cake, allow to set till firm.
Serve with other festivities, and hot chocolate.
Making time: 1 hour
Makes: One 8” cake

Bake at 350 degrees for 30-40 minutes. Cool in pan for 10 mins. This cake needs no frosting.
