INGREDIENTS
1/2 cup uncooked white rice
6 large Vidalia onions
3/4 pound ground spicy pork sausage
1/4 cup chopped green bell pepper
1 egg, beaten
1 (8 ounce) package cream cheese, softened
1/2 teaspoon dried oregano
2 tablespoons chopped fresh parsley
2 tablespoons butter, melted
1/2 teaspoon paprika
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking dish.
In a saucepan bring 1 cup water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Meanwhile, bring a large pot of salted water to a boil. Peel onions and slice off the tops; boil for 12 to 15 minutes, or until tender but not mushy. Drain, cool and remove the centers, leaving the shell intact. Chop onion centers and reserve 1/2 cup.
Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside, reserving drippings. Saute green pepper and 1/2 cup chopped onion in sausage drippings.
In a large bowl combine green pepper, onion, sausage, egg, 1 cup cooked rice, cream cheese, oregano and parsley. Spoon mixture into onion shells and place in prepared dish. Combine melted butter and paprika; brush tops of onions.
Cover and bake in preheated oven for 15 minutes. Uncover, and bake an additional 5 minutes

Baked Stuffed Vidalia Onions
Ingredients
(4 servings)
4 ea Vidalia onions
1 ts Olive oil
1/2 c TVP flakes or granules
1/2 c Hot water
1/2 ts Marjoram
1/2 ts Cumin
1/2 ts Salt
1 pn Cayenne pepper
1/2 c Fine breadcrumbs
1/2 c Vegetable stock
1/2 c Grape juice or white wine
Instructions
Peel onion then slice the tops off & hollow out. Leave about a 1/2-inch shell. Reserve the onion centres. Place shells in a steamer basket & steam for 6 minutes after the water has come to a boil.
Measure 1/2 cup of the reserved onion & finely chop. In a small skillet heat oil & saute onion till it is soft.
Stir together TVP flakes & water. Add seasonings & mix well. Combine with the cooked onions & stir in the breadcrumbs. Place the hollowed out onion shells in a baking dish. Spoon filling into the shells. Any remaining filling that won't fit into the shells can be placed around the shells. Leave uncovered bake at 375F for 30 to 35 minutes. Let stand for 5 minutes before serving.

2 large sweet or Spanish onions (about 1-1/2 pounds total, peeled)
2 teaspoons olive oil
1 clove garlic
One (10-ounce) package frozen chopped spinach, thawed and squeezed dry
1 teaspoon fresh lemon juice
1/4 teaspoon freshly ground pepper
1/4 cup bread crumbs
1/4 cup (1 ounce) crumbled feta cheese
Place the onions in a large saucepan and cover with water. Bring to a boil and cook until the onions are partially tender, about 10 to 15 minutes. Drain and cool; cut the onions in half crosswise. Scoop out the center of each onion half, leaving a 1/2-inch shell. Reserve the centers. If necessary, cut a small piece from the end of each onion shell so the shells will stand upright.
Prepare a shallow baking dish large enough to hold the onion halves in one layer with non-stick pan spray. Place the onions in the prepared dish, hollowed sides up.
Preheat the oven to 350 degrees F.
Chop the reserved centers of the onions. Sauté in oil with the garlic in a medium saucepan until tender, about 5 minutes. Stir in the spinach, lemon juice, and pepper; cook until the liquid evaporates. Remove from the heat; stir in the bread crumbs and cheese
Fill the onion shells with the spinach mixture. Cover with foil and bake about 25 minutes. Serve hot.
Makes 4 servings (1 serving = 1/2 onion)

ONION STUFFED STEAK
1 1/2 c. bread stuffing mix
3 1/2 oz. can French fried onions
1 can water chestnuts, drained and chopped
3 tsp. salt
Black pepper to taste
1 tbsp. parsley flakes
1 tbsp. lemon juice
1 1/2 - 2 lb. round or flank steak, 1/2 inch thick
3 tbsp. flour
3 tbsp. oil
1 can beef consomme
Combine stuffing mix, 3/4 of the onion, water chestnuts, 1 1/2 teaspoons salt, 1/4 teaspoon pepper, parsley flakes, water and lemon juice. Toss lightly to moisten. Let stand. Score steak lightly on both sides. Combine flour, 1 1/2 teaspoon salt, pepper and sprinkle over both sides. Pound flour into meat. Place stuffing into center, packing firmly. Roll steak, secure with skewers or tie with string. Brown in oil, pour off drippings. Add consomme. Cover tightly and cook over low heat about 1 1/2 hours or until tender. Remove string or skewers before slicing. Use remaining onions for garnish. Can be prepared ahead and reheated. Also freezes well. When prepared ahead, do not slice until time to serve.

Ham Stuffed Onions
6 medium sweet onions

1 cup soft bread crumbs
1 1/2 tablespoon melted butter
salt and pepper
PREPARATION:
Peel onions; rinse, pat dry, and cut off tops. Pierce each onion with skewer to keep together. Cook onions in boiling salted water until almost tender. Drain onions and remove centers.
Chop onion centers and combine with ham, green pepper, 1/2 cup bread crumbs, 1 tablespoon butter, salt, and pepper.
Fill onions with the ham mixture. Place in a baking dish. Pour 1 cup chicken or beef broth or white sauce in baking pan around onions. Combine remaining 1/2 cup bread crumbs with 1/2 tablespoon melted butter. Top onions with buttered bread crumbs. Bake at 375° for 30 minutes.

Scoop out middle of onion and mix with grated cheese, chopped sage leaves and red chilli pepper. Pile back into onion, wrap in smoked streaky bacon and bake until crispy on outside and tender in middle.
