CHINESE SCRAMBLED EGGS
8 eggs
1/2 c. milk
1 tsp. soy sauce
1/2 tsp. ground ginger
1/4 tsp. salt
2 tbsp. oil
1 (10 oz.) pkg. Chinese-style stir-fry frozen vegetables
Beat together eggs, milk and seasonings with a fork, mixing thoroughly for uniform yellow, or just slightly for white and yellow streaks. Set aside.
Heat oil in wok or 10-inch skillet over medium-high heat, until hot enough to sizzle a drop of water. Add vegetables (and seasoning packet if any comes with vegetables) and cook, stirring constantly, 1 to 2 minutes. Reduce heat to medium. Pour in egg mixture.
As mixture begins to set, turn a pancake turner over and gently draw completely across the bottom of pan, forming large soft curds. Continue until eggs are thickened throughout but still moist. (It is better to remove scrambled eggs from pan when they are slightly underdone. Heat retained in eggs completes the cooking.) Do not stir constantly.

Most stir fry sauces ARE pretty healthy. The only reason why stir fries are sometimes considered bad for you is because when you get them from chinese restaurants; they use a litre of oil to cook it with.
Go with any sauce you like, oyster sauce, plum sauce, malaysian chillie sauce, and yes, you would eat them with rice. In fact, in Asia you don't have rice with your stir fry. You have stir fry with your rice.
I won't completely forego the oil, you do need some oil to make it a bit tastier. I recommend either peanut oil or a bit of sesame oil, they add taste to your cooking. One or two tablespoons oughta be enough.
Alternative: If you're bored with rice, you can toss in some noodles (hokkien egg noodles or flat rice noodles - the wide type) whilst you cook the stir fry. Add a bit more sauce so its also enough for the noodles. This is very good too!

you could add rice to it, and also some cabbage, red and green peppers,baby corn on the cob [can] onions, cooked black beans, garlic powder, can tomatoes [cut up] any left over meat or chicken, mushrooms.....i add just a little soy sauce and with the juices [of all above you have a nice sauce that is not heavy...[when you start stir frying, add a little cooking oil......i try to use olive oil, gives a good flavor to the dish

this is Wat i would use diced carrots,green beans,green pepper and red pepper,hand full peas,mushrooms all of this should be freshly cut up.cook them in a bit of oil until half way cooked.
use chicken fillets strips brown them in oil.and spices and 1 grated tomatoes.
boil rice grainy.
mix veg,chicken and rice together and steam for a further half hour on low heat.
optional:cubed pineapples at the end.
