Can't remember what it was called but it tasted absolutely fantastic!!
The pudding was served at school and consisted of a sweet pastry base with a solid 'minty' chocolate filling. It was served in squares and the pastry 'thingie' was always served cold, obviously allowing the chocolate filling to set. What sticks in the memory is the green custard that accompanied the sweet. For years afterwards I was amazed how they got the custard green? My childhood imagination thought of things like squashed frogs, bogeys and seaweed was the key to getting the custard that 'vile' colour.
Whatever it was called it's making me yearn for a slice right now!

Pistachio pudding is wonderful. I also love watergate salad which you can make with the pistachio pudding mix.
Pistachio Ice Cream
1 cup unsalted shelled pistachios
1 cup sugar
2 cups milk (do not use low-fat or nonfat)
3 cups heavy cream
12 large egg yolks
1/2 teaspoon almond extract
1 cup whipped cream, for garnish
1 cup unsalted shelled pistachios, toasted, coarsely chopped, for garnish
Finely grind 1 cup of the pistachios and 1/2 cup of the sugar in a food processor, being careful not to turn the mixture into butter. Bring the milk and cream to a boil in heavy large saucepan. Remove from heat.
Combine the egg yolks and remaining 1/2-cup sugar in a mixing bowl and whisk to blend. Gradually whisk 1 cup of the hot milk mixture into the eggs. Gradually add the egg mixture in a slow, steady stream into the hot cream in the saucepan. Cook over low heat, stirring occasionally, until the custard thickens enough to coat the back of a spoon and reaches 170 degrees on an instant-read thermometer, about 6 minutes.
Remove from the heat and strain into a large bowl. Add pistachio mixture and almond extract. Cover with plastic wrap, pressing down against the surface to keep a skin from forming, and chill in the refrigerator for at least 2 hours.
Remove from the refrigerator and pour into the bowl of an ice cream machine. Freeze according to the manufacturer's instructions. After the ice cream is made, transfer to an airtight container and freeze until ready to serve.
Garnish with whipped cream and toasted pistachios.
Watergate Salad
INGREDIENTS
1 (3.4 ounce) package instant pistachio pudding mix
1 (20 ounce) can crushed pineapple, drained
1 1/2 cups miniature marshmallows
1 (12 ounce) container frozen whipped topping, thawed
1/2 cup flaked coconut
1/2 cup maraschino cherries, drained
DIRECTIONS
In a large bowl, combine pudding mix and pineapple; mix well. Add marshmallows and 3/4 of the container of dessert topping (add more to get a creamier consistency). Toss in the coconut; mix well. Transfer to a serving dish and top with halved cherries and any extra coconut. Chill for at least an hour before serving. Will be good the next day.

Pistachio pudding! My mom often used to make it (from the powder mix of course) for my father (she actually didn't like it herself) when I was young. It reminds me of being a kid because my parents divorced when I was 10 and so Mom didn't make it anymore after that. I am gonna have to pick myself up some now after thinking about it :)
