the cave walls are stone lavers not solid and very rough with the odd compressed clay layer in between .The caves i have seen all sound hollow when you tap them and so have not stuck and damage easy .

Why not just fit plaster board throughout. Quick and not that messy.

First seal the walls with some pva glue ( a mix of 1 part glue to 5 part water ) then mix up some cement and apply firmly to the wall after this you can put a finish coat of plaster on top again apply firmly.
Or after sealing with glue you can buy a bag of one coat plaster this you can apply at a much thicker rate eliminating the need for two coats. I used this method on stone walls and it worked.

Sand and cement render followed by a coat of finish plaster.
If it is very rough it may have to be several coats of render.
It still has the tendancy to produce hairline cracks but it should be stronger than traditional two coat plaster.

You can buy a special sealer, to cover the area first.
