I purchase fish often and found this inexpensive fish TALAPIA to be firm and mild tasting so I would love to get some help from you out there in yahooland...to help me prepare it differently..thanks so much for your help in advance....

Amount Measure Ingredient -- Preparation Method

SEASONING MIX
2/3 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon dry mustard
1/3 teaspoon garlic powder
1/3 teaspoon white pepper
1/3 teaspoon ground cumin
1/3 teaspoon dried basil
1/3 teaspoon dried oregano
1 1/3 dashes black pepper
1 1/3 dashes dried thyme

4 talapia fillets
vegetable cooking spray

Combine the seasonings mix ingredients in a small bowl. Sprinkle each
side of each fillet evenly with 1/2 teaspoon of this mixture.
Preheat a 10-inch skillet over high heat to 400°, about 5 minutes.
Spray the top side of each fillet evenly with vegetable cooking spray.
Place the fillets, two at a time (sprayed side down), in the skillet,
reduce the heat to medium, and cook 2 minutes. Turn the fillets over and
cook until done, about 2 minutes more. Remove the cooked fillets, wipe the
skillet clean, bring the heat back to 400°, and repeat the process with the
remaining fillets.

TALAPIA WITH PESTO

Pesto:

2 bunches of fresh basil, chopped
1/2 cup olive oil
1 garlic clove, minced
1 package Ricotta cheese

Fish Dish:

4-6 pieces tilapia
pesto sauce (from above recipe)
1-2 large ripe tomatoes, 1/2 inch sliced

Pesto:

In a blender, combine all ingredients and puree. Continue to add more olive oil if sauce is too dry for your preference. Keep in mind you want the pesto sauce to be more on the thicker side.

Fish:

Arrange fish in a baking dish or pan. Spoon pesto sauce over each fillet of fish. Place a 1-2 slice (s) of tomato on top of each fillet.

Bake at 350°F for 20-30 minutes or until fish is cooked throughout. Additionally, you can place a slice of bocconcini or mozzarella cheese on top of the tomato, if desired.

Tilapia is SO versatile. One way is to wrap tilapia filets with bacon and grill/pan broil it. The bacon's smoke flavor will seep right in to the fish.

Another way is to pan fry it with some butter and rosemary. Put it on a plate. Then brown some onions with butter and add some wine. Slow cook it for 10 minutes, adding seasonings if necessary. When the wine is perfectly reduced (somewhat dry), pour the wine reduction over the fish.

Take the whole fish(cleaned) and make 4 deep slits on each side. Coat the fish with a mixture of flour and your favorite spices and herbs. Deep fry the whole fish until golden brown....turn over in the oil if needed....drain on a wire rack for a minute or two before serving. Serves 2....and it is wonderful!

RANCH TILAPIA

1 5 oz. tilapia fillet
1/2 cup Ranch dressing
1 cup Parmesan cheese
2 cups corn flakes
1 pinch salt
1 pinch black pepper

Preheat oven at 350 degrees.
Grind up corn flakes into crumbs. Mix Parmesan cheese, salt, pepper in with the corn flake crumbs. Baste the tilapia fillet (both sides) with Ranch dressing. Coat fish with the crumb mix evenly.

Bake for 17 mins.

I loooove Tilapia! Lately I've been cooking mine in the microwave. I buy filets, season and refrigerate overnight...then pop them in the microwave for five minutes. But, I have also baked them...same prep, pre-heat oven to 375, spray pan with non-stick cooking spray and baked 9 to 12 minutes. Either way is delicious and healthy. Note: You can this fish in bulk (box) for $10.78 (approx.) at Wal-Mart. The filets are individually shrink wrapped.

1. clean, wash talapia fish. sprinkle saly, lime juice, juice of garlic and ginger, leave aside for 5 mins. now, remove the fish from juice and drain excess of it. sprinkle gram flour and rice powder. deep fry till golden brown

2. make a paste of mustard and little onion, fresh green chilli and coriander leaves. heat mustard oil in wok, cook the mix till water reduces. add light fried fish, add little water and simmer

There are SOOOOO many ways to cook tilapia. You can cook it in papillote (in parchment paper in the oven) you can fry it. You can treat it just how you would any flat fish like that. Its all about the sauces you put with it to add flavor.

You can look for recipes in the food channel tv web page (google it).
My wife and me prepare fish tacos (yummy, yummy) and lemon tilapia.
It is cheap and good and you can do a lot of things with it.
