my cookies always turn out hard and crunchy. i don't like crunchy! how do i make soft ones?

TOASTER OVEN SOFT OATMEAL RAISIN
COOKIES

2 1/2 cups of Quaker Oats (quick or old fashioned, uncooked)
1 cup flour
2 eggs
1/2 teaspoon salt
1 cup butter
1 teaspoon vanilla
1 cup brown sugar
1/3 cup sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 cup raisins

Mix the salt, butter, vanilla, and brown sugar in a big bowl. Add the sugar, baking soda, eggs and ground cinnamon until fully mixed. Stir in the flour, mixing thoroughly. Stir in the Quaker Oats until you see no flour. Mix in the raisins.

Drop by large rounded spoonfulls onto a ungreased cookie sheets (about six per batch).

Press the cookies down to make them flat before baking.

Bake in a preheated 350°F for 20 Minutes or until brown at the top.

Ovens may vary, (I used a toaster oven) but these can be made as well in a regular oven. They will cook in less time in a regular oven so watch them (check them at the 10 minute mark).

Make these cookies and put them in with the hard ones.

Unbaked Cookies

Bring to a boil:
2 c. sugar
6 Tbsp. cocoa
1/2 c. milk
1/4 lb. butter (1 stick)

Add:
3 c. oatmeal
1/2 c. peanut butter
1 c. coconut

Drop from tablespoon onto cookie sheets (usually 2). No baking, just allow them to cool.

Not only are they good but any cookie in the cookie jar will become nice and soft, as if you baked them that way.

soft chocolate chip cookies
INGREDIENTS
1 cup packed brown sugar
1 cup shortening
2 eggs
1 teaspoon baking soda

2 1/2 cups sifted all-purpose flour
1/2 cup chopped walnuts
2 cups semisweet chocolate chips
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Mix sugar and shortening until smooth and fluffy. Beat eggs and add baking soda which has been dissolved in 1 tablespoon hot water.
Sift flour and salt together and add to the creamed mixture. Add vanilla and fold in nuts and chocolate chips.
Drop by spoonfuls onto lightly greased cookie sheets. Bake for 9 to 10 minutes.

I always shave off about a 1-2 mins off the baking time. Turn off the oven but keep the cookies on the warm stove for just about 30 seconds just to make sure they are set.

under bake them slightly if when they are in the oven they look done then they are over done so pull them out when they are still slightly gooey then remove from sheet pan and place on a cooling rack immediately because the cookies will continue to cook on the hot sheet pan and when storing the cookies place in an air tight bowl with a piece of plain old bread on top of them this will keep them moist, fresh, and soft longer

Just as the edges (start) to turn brown, take them out of the oven and leave on the baking pan for a few minuets to let them finish cooking just is case the middle isn't done.

You make cookies and store them in a air tight container with a piece of regular sandwich bread. They will stay softer for days longer
