Falafel Salad A-Go-Go

Mandarin Orange Salad

1/2 pound Spinach or mixed greens
1 can (11 or 15 oz.) Mandarin Oranges, drained
1/2 cup sliced ripe olives
1/2 cup sliced Red Onion
1/2 cup balsamic vinaigrette
1/4 cup crumbled feta cheese

Combine spinach, mandarin oranges, olives and onion in large serving bowl. Pour vinaigrette over salad; toss to evenly coat. Top with feta cheese.

Strawberry spinach salad w feta, pine nuts & balsamic

Nicoise

Nicoise Pasta salad

Pear salad w blue cheese and walnuts

I love beets - at a salad bar I combine beets, cottage cheese, mushrooms, broc (sounds weird, but good).

Caprese and Then Some Salad

1 tablespoon red wine vinegar
1 tablespoon olive oil
2 tomatoes, seeded and diced
2 artichoke hearts, quartered
6 hearts of palm, quartered
10 mini mozzarella balls
1/4 cup kalamata olives, chopped
1 garlic clove, minced
1 tablespoon fresh parsley
1 tablespoon fresh basil
Salt and pepper to taste
1 bag (10 ounces) chopped romaine lettuce

In a large bowl combine the vinegar, olive oil, tomatoes, artichoke
hearts, hearts of palm, mozzarella, olives, garlic, parsley and
basil. Season with salt and pepper to taste. Divide lettuce among four plates. Spoon vegetable mixture over lettuce.

I love mixing fruit and nuts in my salads

mixed greens with mandarin organges,choppedscallions andsliced almonds served with either a sweet or vinagrette dressing.

Another is mixed greens with goat cheese crumbles (gorganzola will work as well), walnuts and dried cranberries served with an organge poppyseed dressing.

greens with mango and macademia nuts with a fruit type dressing.
