Pretty easy. Simply put enough oil in the pan to cover the spud. You can probably get away with approx 1/2 inch of oil. Just be careful because the oil will sputter and pop and could possibly spatter over the stovetop - so if you are using a gas stove it could ignite - use a pair of tongs to turn the spuds once in awhile to get that golden brown. If you have the time pre cook the spud at a low heat and then remove to a towel to drain turn up the heat and recook - makes a great fry.

Fill the pan half way with oil and then put it on medium heat. Put in the fries and get a plate ready with a paper towel to catch the grease when you take the fries out of the pan. Keep an eye on them...do not leave, that is how fires are started. Turn them every do often to make sure they are cooking evenly. Once golden brown, remove them and place on the plate with the paper towel. While they are hot is when you want to salt. Then Enjoy!
