Taste is an individual thing and the purpose of putting cruet sets (Salt and pepper shakers) and table sauces ( mint chutney in india, Tobasco, Mustard etc in west, chilly paste, soya etc in oriental) is so that you can use your choice of taste enhancer if required. So there's really no cheating. Food is meant to be enjoyed so enjoy it the way you like it.

The base dish however should ideally be enjoyed in its original form. But if you dont like the taste 100% then these table sauces etc. are always there.

Yes, I do put spices on everything. I grew up on Cajun food, so I put Tony's on lots of stuff. Nowadays I'm a fiend for hot and spicy Asian foods, so I use a whole lot of Sambal and Sriracha. And I'm lucky in that my hubby is Colombian, so I learned about a great spice blend called Triguisar, which also gets used a fair amount of the time. Spices make food worth the time out of my day that it takes to prepare and eat them.

A side note: If you ever read up on spices (I recommend Maggie Stuckey's book), you will be sooooooo glad you live now (when pepper is cheap and available) and not back 400 or so years ago when people actually fought wars over spices!

I am not exactly sure what you mean by American food- most foods is America come from all over the world- but I don't think it is cheating at all to add spices to your food. That is what makes America great everyone can add their own "spices" and make the place even better!

No I dont, I appreciate american food for its lack of spicyness. When my mom grills burgers in the summer she tries to sneak in the garlic-ginger paste and chili powder but I dont let her, lol. It's nice not having all that spice for a change.

Yes, I do too. I use lots of Thai chillies, or Asian hot sauces, or chopped up Jalapenos steeped with soya sauce.
