You make adobo -- its like a mexican marinade/bbq sauce --

20 chipotles seeded and veined
3 ancho chiles seeded and veined
4 garlic cloves
1/4 teaspoon dried marjoram
1/4 teaspoon dried thyme
1 teaspoon ground cumin
2 bay leaves
1/2 cup cider vinegar
1/2 cup white vinegar
1/4 cup tightly packed dark brown sugar
1 tablespoon salt

throw all that in a blender -- you have adobo. if you use it as a marinade you can add a cup of liquid -- i like to use orange/pineapple juice -- just don't use stuff thats reconsitituted or it doesn't cook well.

Add them to sauces and soups as a flavor layer/background. You can even use them as your main flavor if you wanted to. I find they're great to put into something as just another layer of flavor though. Have fun with it and experiment.
