sausage is a generic term. what is in them should be on the package. different sausages are made with different meat. traditional hotdogs are made with beef and pork. there are chicken hotdogs, kosher hotdogs (no pork), turkey hotdogs, etc.

Not the very cheapest of them but most do. Check the label to see if they have chicken/turkey/pork/beef in them.

Also note that any part of a cow could be in there to count as beef-content. That includes parts that are disgusting to think about laying around in a butcher shop (eyes, ears, nose, lips, genitals) much less to think of eating sight unseen inside that sausage/hot dog.

Hot dogs or frankfurts are made from pork or they can be a mixture of pork and beef.
First you have fresh ingredient and mix them with a premix formula which is made by specific companies. The premix consists of a meal (flour or corn or wheat base), herbs, spices, colour, salt and most importantly sodium nitrate and antioxidants.
The sodium nitrates prevent growth of dangerous micro organisms like Botulism.

The meat is minced up and mixed with ice water and the premix, this is then left overnight and then processed into coloured sausage skins the next day. Then the product is cooked slowly in a steam oven to about 75 degree celcius.
Then the product is cooled and stored in a coolroom overnight.

The product is packed and sold.

Bigger companies may have different methods of cooking, cooling and preparation. Hot dogs can be also cooked in hot water. The water shouldnt be too hot and when the sausages have reached the required temparature they are removed and cooled.

You would have to read the label or ask the person who prepares them. You can buy all pork, pork and beef, 100% beef, chicken or turkey.
