I can't answer specifically for Prosthetics, but when I had a crown made for a tooth, my dentist made an appointment for me at the lab that makes the crowns.

So that the color of enamel would match my own teeth perfectly---natural shading and all.

I would imagine the same care would be taken when making prosthetics.

When my leg was made (left leg below the knee amputee), color was not a concern or even discussed. I would say matching skin color to colored cards, more than likely.
