If you make a meatless sauce (traditional tomato or whatever you like better) you can serve the meat as a sidedish. Grilled or broiled chicken breast with zucchini slices goes really well that way.

If the meat is in the sauce, you can serve a sidedish of a green veggie like zucchini or green beans or something else to add a little color.

Sauteed escarole! (AKA "Fried lettuce")

Escarole is a curly, light-green vegetable, slightly bitter when raw but mild and flavorful when cooked. I like to tear it up coarsely, then sautee it in a wok (or big frying pan) in olive oil, with chopped garlic and maybe a dash of crushed red pepper. We had this the first time at a "family-style" Italian restaurant and it's been a favorite ever since.

Meat in your sauce or just meatballs, pizza, desert pizza, Parmesan cheese, nothing like a good toasted garlic bread and salad. Of course your fave. wine or any other drink. It all depends on what you like.

Add a dry red wine and you've got a meal! Add some kind of dessert such as ice cream and espresso, and you've got a feast!
