I had to pick them from my garden because of some cold weather, I have several bags full of peppers! How can I store them to use during the winter months?

You should probably look into getting them pickled that way they will last for years in an air tight container.

it all depends on if you are planning on using then in a couple of days or a longer period. Peppers ripen on the vine there for they start to detirierate as soon as they are picked (if bought in the store, if you do it your self then pick them early). Puttin them in the fridge will help but dont put them in a plastic bag that will create to much condensation and further the rotting process. Put them in a paper bag and put them in the back of the bottom shelf. If you are going to keep then for longer than a week them you should freeze them. You will get the best results to use them within a week and put them in a paper bag in a drawer or a cubburd.

We do this for bell peppers, so it might work for recipes you are going to cook using the jalapenos &/or bannanas: You can chop them up in to measured portions & freeze; be sure to wrap well to protect from freezor burn. My wife usually chops her's up into 1/2 cup and 1 cup portions.

She also suggested pickling them whole or in rings with your favorite recipe. There are many available on the web

We just keep ours in ziploc freezer bags in the freezer. We use them all winter and they're actually pretty easy to cut up while still frozen.

you could oven dry them in strips at 65C for 24 hours or possibly hang them using needle and thread like you can chillies....try a few differnt methods and you will know what works best for next time :-)

put them in zip lock baggies and freeze them. whenver you want to use them, just let them thaw or you can boil them
