I have one for chocolate, admittedly it isn't very healthy, as it contains corn syrup, but then what icing is good for you? Wink

Makes about 3 cups

1 ½ cups heavy cream
16 oz bittersweet or semisweet chocolate, chopped fine
½ cup corn syrup
1 tsp vanilla extract

Place chocolate in a heat proof bowl. Bring cream to a boil in small saucepan over med-high heat; pour over chocolate. Add corn syrup and let stand 3 mins. whisk gently until smooth; stip in vanilla. put in fridge and chill for 1- 1 ½ hours, stirring every 15 mins. until mix is a spreadable consistency.

the cream cheese with the butter and powdered sugar recipe I noticed in some responses is good idea; but take recipe and split among different bowls and added different flavorings like coco; cinnamon; marshmallow cream; honey; pureed or mashed fruit like strawberries, pineapple, etc. Then the kids can spread on their own un-iced cupcakes or cookies as they like; also have side dishes of sprinkles, tiny chocolate chips, candies etc. to decorate with. Can be a fruit dip, too (the grownups might enjoy as well)

The icing that I always use for cut-out cookies is just powdered sugar (confectioner's sugar) and either water or milk, with a little bit of vanilla extract. Just experiment a little to get a consistency that works, not too thick, not too runny.
