The more rare the meat the stronger the flavor is. Also, the meat is more tender and moist with less heat applied.

I don't eat a lot of beef but if I have a steak, I want it RARE RARE RARE! The more you cook a steak, the drier and tougher it becomes.
Please pass the Worcestershire sauce and a good yeast roll!

Rare meat still has the blood in it, and to the carnivore in many people, the taste is appealing (though it is appalling to others.) Humans have those cutting teeth in the front for tearing - using them on the less well done meat seems primal in some way I guess.

Assuming that it is a quality piece of meat...it tastes better, but most of all it has a different texture. It is softer and more juicy. A good rare filet mignon will basically melt in your mouth...which is much nicer than chewing on a tough piece of overcooked hide that has all the flavor cooked of it.

The flavor and texture of beef is better if it is served rare. It is also retains most of its moisture that way too.

because everyone has their own tastes, thats what make us different than each other, and some cuts of beef are better rare, than all dried out.

It relates back to when we ate our catch raw. some of us never got away from it and still like a little blood in our steak and cool texture.

Beef becomes tough when it is overcooked. Some people hated that.

I think that it is juicer, and has better flavor. To me a well done steak is like shoe leather, and I don't like them that way
