Baked yams topped with spicy black beans.

Just scrub a couple of large yams really well, and bake with the skin on in the oven until completely soft, just like you would bake any potato. Open a can of black beans, mix with a spoonful or two of salsa, a dash of cinnamon, and a little fresh lime juice if you have a lime around. Quickly heat up the bean mixture in the microwave. When the yams are done, split them in half the long way, and pile the spicy black bean mixture on top. For added flavor and nutrition, you can top with a spoonful of plain nonfat yogurts and some chopped fresh chives or cilantro if you have any. Or if you have access to an avocado tree, this also tastes great with a couple of avocado slices on top.

Yummy, healthy, hearty and filling, costs about $3-4 to feed two people. Enjoy!

Try this! Easy and Inexpensive!!!

Pasta of your choice
1 Can of Hunt's Diced Tomatoes with Basil, Garlic and Oregano
1 can of Hunt's Diced Tomatoes and Onion
Last day meat or chicken
A good and inexpensive bottle of red wine (I like Coastal Ridge Cabernet Sauvignon - A great everyday wine that costs between $4.99 to $6.99 a bottle depending where you buy it)

Dice and cook the meat or chicken in a large frying pan...
Add the diced tomato/spice/onion combo...
Add a little red wine to give the sauce some body...
Cook on Medium until flavors meld... About an hour...

Boil water and add the pasta... cook 8 to 10 minutes.
Drain water and add pasta to sauce.

Serve with a glass of wine.

You can make the sauce up a day ahead if you want. Freeze the leftovers for another day!

Poor Man's Lasagna
1 lb. ground beef
2 cups of macaroni
1 can of Tomato soup
1 pkg. of shredded Mozzarella


Brown beef and add soup and about 3/4 soup can of water.
Boil macaroni according to package. Put a little of the sauce mix in the bottom of a good size casserole dish, put a layer of macaroni then a layer of cheese and then top with some sauce.
Continue this till you use all ingredients ending with cheese on top.
Put in oven at 350 degrees for about 30 - 45 min.

I get paid once a month so I have some lean weeks in-between...Here are some tasty inexpensive ideas:
1) English Muffin Pizzas- Take English Muffins, Mozzerella, Ragu Pizza Quick Sauce put sauce on muffins, place sliced or shredded mozzerella on top spoon a lttle more sauce on top and bake in 400 degree oven for at least 20 minutes or until cheese is brown and bubbly. When the Thomas' Brand English Muffins are on sale, I usually get a double bag and freeze one. Sometimes I have one in the morning toasted with butter, then for lunch you can make a great sandwich with Ham sliced tomatoes and some Monterrey Jack cheese on top. Place in toaster oven and you have a great grilled sandwich. Deviled Eggs are another choice- Hard boil eggs, cool, remove yolk mix with Hellman's mayo, a little white vinegar, salt, pepper, fill back in whites and sprinkle a little paprika. One last choice for Lunch or Dinner: Our family called it simply Macaroni, Hamburger, and Tomato- You will need a good 1 lb or so package good chopmeat, 1 green pepper, Wishbone Robusto Salad Dressing, one can of Crushed tomatoes (I use Tuttorosa). I onion., Worcheshire sauce. Brown chopmeat in skillet. drain fat. then brown diced onion and garlic.(approx. 2 cloves chopped). Add Salad Dressing, Worcheshire sauce, (a good dousing) salt, pepper to taste. When everything is simmered (approx. 20 minutes add can of tomatoes, break up, stirring. When most of liquid is absorbed, cover and simmer about 30 minutes. Meanwhile boil large pot of salted water. When water comes to boil put 1 lb box of Ronzoni Rotelle macaroni in. Cook for only 6 minutes. (Do not overcook). Drain. mix hamburger mixture over pasta and serve. You can reheat next day in microwave. (better next day).

A. Potato and Egg Breakfast Tacos-you will need a largish potato, eggs, tortillas and salsa.

(Note you can add sausage, bacon or cheese or green onions but that means you have more than 4 ingredients)

1. Boil the potato in its jacket till it is cooked (I put it in a bowl of water in the microwave on High for 10 mins). Remove it from the water and let it cool enough to handle. Cut it into smallish dice.

2. One person will probably eat something like 1/3 of a cup of diced potato in this recipe, so put whatever you're not using in the fridge.

3. Heat a skillet to about medium-high and spray it with some cooking spray or put in a little oil.

4. When the skillet is hot, put in about 1/3 cup of potato per person, and stir-fry it around till the potato cubes start to look appetizing, just a little bit browned. Sprinkle the potatoes with salt and fresh ground pepper and stir them around some more. Reduce the heat to maybe medium before you put in the eggs.

5. With the potatoes still cooking, break one egg per person into a bowl and beat the eggs very lightly with a fork, which will not take more than a few seconds. Add a pinch of salt.

6. Add the eggs to the skillet with the potatoes. Scramble the eggs and potatoes around with a fork till the eggs are cooked (which will be quick)

7. Heat corn or flour tortillas till HOT. Put a couple spoonfuls of the potato-egg mixture on each tortilla. Fold over the tortilla to make a soft taco. Serve with salsa.


B. Pasta with Parmesan and pepper (This is what I remember of a recipe that came from an Italian cookbook that had some elaborate recipes and also this simple one. It comes out like pasta in a sauce of a thin, tasty broth. The cookbook was "The Good Food of Italy" by Claudia Roden and I think she said some chefs eat it when they're tired of rich fancy food.)

1. Dried pasta -- use imported Italian dried pasta like DeCecco; do not use fresh pasta --
2. Shredded Parmesan --do not use the powdered kind that comes in a box! Either buy a chunk of Parmesan and shred it with a cheese grater, or use the shredded kind from the deli section of the market. Domestic or Argentinian Parmesan is acceptable here to save money.
3. Sea salt
4. Fresh-ground black pepper.

Heat a pot of salted water to boiling. Add pasta. Cook till all dente. Don't drain it yet -- First take a coffee mug or measuring cup and scoop out some of the hot pasta water, which you will need.
Now drain the pasta and do NOT rinse it. Put it immediately in a bowl or in the now-drained pot. Put in a VERY generous amount of shredded Parmesan and grind a generous amount of black pepper over it. Moisten with a little of the steaming-hot reserved pasta water; stir around to melt the cheese a little; and eat.

Mac and cheese w/ham. Get a ham slice with the packaged meat (like hamburger, not lunch meat). Make mac/cheese according to box, chunk up ham, heat, mix together.

Ramen noodles plus peanut sauce (see ethnic aisle) rocks. Add sliced green onions and/or tofu for flavor and substance.

Subbing ground turkey is almost always less $ for hamburger.

Really good cornbread - one box Jiffy corn muffin mix + one box Jiffy white cake mix, add all ingredients on both boxes, cook at highest temp for longest time (per boxes).

If you like instant grits you can add stuff to them to make them sweet or savory.

Microwave burritos with fresh veggies and salsa.

Chicken drumsticks with cornflake crumbs (box of cornflake crumbs available in aisle with stuffing and breadcrumbs--don't buy cereal and then crush). Cheap and good!

"Red beans and rice"
Brown 1 lb. italian sausage (removed from casing)
Mix in one can of red beans (drained and rinsed)
and a can of diced canned tomatoes (with juice)
Serve over rice (cook rice seperately)

"Pasta Peas"
Cook some frozen peas with a bit of chopped onion (I use the frozen pre-chopped ones.) in some (a couple of tablespoons) oil in a pot. Add one small can hunts tomato sauce. Add some salt and pepper. Cook for 20 minutes or until peas are tender. Serve with ditalini or shell pasta and don't forget the parm. cheese!

"Pasta beans"
In a pot add one can of great northern or cannelloni beans (rinsed and drained), some oil, and one can of diced tomatoes. Add salt, pepper, and sprinkle in some dried basil. (You need quite a bit of salt btw.) Simmer for 15-20 minutes and serve with pasta. (Spaghetti, shells, really any type is good!) Top with parm. cheese

Deep fry pork and set aside, saute vegetables add sauce,bring to cook stir in pork.
Very easy to make and appetizing too. U can get sweet & sour sauce ready made from chinese grocery stores.

Take bread slices, Spread a spoonful of tomato suace over each one Sprinkle generously with grated parm cheese. Top with pepperoni or any other of your favorites. You can sprinkle with italian spice .Bake in conv. or toater oven until edges of bread are well browned, Thus , you have pizza bread.
