Check with hotels in the USA, many take on trainees and bring them in on a J-1 visa.
The Broadmoor (5 stars) in Colorado Springs, Colorado does that on a regular basis.

Have you looked at the US News & World Report college rankings, they probably have a list of the top hospitality schools in the US.
The Cornell Hotel School I know is very highly regarded.
You might also try asking about it at www.collegeconfidential.com - go into the parents forum and ask there, there are some extremely knowledgable and helpful people out there.
