You need a Chinese visa, I think, and then also travel documents to Hong Kong. When I went to Hk it was through China, so I already had my Chinese visa.

If you are a Chinese citizen, then yes definitely. If you are a Taiwanese citizen then, even more definitely.

If you are a Brittish citizen then maybe not (you can just use your passport because it is still half under Brit rule and HK cits. carry both a Chinese passport (special ones though for HK) and UK passports (but special ones for HK) they are considered cits of both countries and also HK.

You will love Hong Kong. Your cruise line, or the travel agent that booked your cruise should be able to help you out with that. Otherwise try www.travelstate.gov. This will give you the info you need. May I suggest you take an empty suitcase. You will love the shopping and the quality! Have Fun!

particular you could word in Hong Kong for a China visa! HK and CN visa regulation are thoroughly separate. once you've ninety days stay in HK, then bypass to CN, then, once you come to HK you've yet another new ninety days. right that's my prefered position to purchase China visas:
