I'm on a low calorie diet - but the hubby is on a low carb diet. And my taste buds are screaming for a pizza! Help!

My wife makes a no crust meat pizza. She just presses ground Italian sausage into a pie pan bakes it for about 10-15 min drains the grease and then puts piazza sauce, mushrooms, red onion, and shredded mozzarella. Bakes it for an additional 10-15 min It's not bad.

WestGal's Low-Carb Pizza Crust

Recipe By : Westgal
Categories: Breads & Things

1 1/2 cups high gluten flour
1/2 cup wheat bran
1 ounce melted butter
1/4 teaspoon salt
2 teaspoons yeast
2 teaspoons sugar (do not substitute...Sugar burns off)
1 cup warm water

Mix dough with hands. Dough will be wet. Cover and let rise about 30 minutes. Gently rework dough.
Divide into two portions and spread into 2 14" pizza pans. Cover and let rise 20 minutes.
Put toppings on crusts and place into preheated 350 degree F oven. Bake 25-30 minutes or until crust is golden brown
You might also want to use the entire recipe for one thicker crust pizza.
I topped mine with Hunts No Added Sugar Traditional Spaghetti Sauce. 1/2 Cup=9g carbs with 3 g fiber. Also, added pepperoni slices and grated cheese.
Total your crust carb count with your toppings and divide total by number slices for carb count per serving.

NOTES : Carbs break down as follows - will vary by brand, so check your label!
High gluten flour = 95; wheat bran = 6 == total = 101, or 50.5 per pizza
Sample carb count:
Crust = 50.5g
1/2 cup sauce = 6
3/4 Cup cheese =12
Pepperoni = 0
Total carbs = 68.5g Divided into 8 slices=8.55g carbs per slice

You can buy a "low-carb" pizza dough mix. I tried it once and it was OK.
Hey, just say the heck with it and go to Pizza Hut and split a Medium Pizza with a salad bar. It's OK, I say so !!!

Low Carb Luxury Recipe!
Deep Dish Quiche Pizza

Ingredients:

* 1 4-oz pkg cream cheese
* 4 eggs
* 1/3 cup heavy cream
* 1/4 cup parmesan cheese (fresh grated)
* 1 Tablespoons chives
* 1/2 teaspoon Italian seasoning
* 2 cups mixed Italian cheeses of your choice
* 1/4 teaspoon garlic powder
* 1/2 cup low-carb pizza sauce

Plus any or all of the following "toppings":

* pepperoni
* black olives
* mushrooms
* chopped green peppers
* chopped onion
* ham or bacon bits
* browned, seasoned and totally drained ground beef or turkey

Preheat oven to 375°F.
Beat together cream cheese and eggs until smooth. Add cream, parmesan cheese, and spices and mix again.

Spray 9" or larger glass baking dish with oil or PAM. Sprinkle 2 cups Italian cheeses into dish and pour egg mixture over it. Bake at 375°F for 30 minutes. Remove from oven and let stand for 5 minutes.

Spread on pizza sauce; sprinkle on 1 cup mozzarella cheese and pile high with your chosen toppings. Return to oven and bake until bubbly and browning. Allow to stand 10-15 minutes before cutting.

Serves 6. 5 carbs per serving without toppings.





Low Carb Pizza Recipe

There are two key steps in making low carb pizza, first you must saute your vegetables in butter before you put them on the pizza. This helps get the water out of them which you need to do because the low carb pizza crust is so thin. You should ideally get low carb pitas for the crust (5g of net carbs and 60 calories.) The low carb pita is much thinner than a normal pita, but you will be able to pick up a piece of pizza in your hand. If you can't find low carb pitas, then you can use low carb tortillas, but you won't be able to pick up the pizza -- a knife and fork will have to do.

First saute onions, mushrooms, peppers, or any other vegetable you choose for the pizza.

Use salsa for pizza sauce. (Salsa is usually inherently low carb, but check the label!)

Slice up beefstick or pepperoni or saute hamburger, turkey, or any other meat with the veggies.

Use pre-packaged cheese or shred your own.

Put low carb pizza pita or tortilla on a dry cookie sheet.

Add salsa, meat, veggies & cheese.

Bake at 350 until the cheese is melted.

8. Remove from oven and spread sauce over baked mixture.
9. Add toppings of choice.
10. Cover with remaining mozzerella cheese.
11. Bake until bubbly and brown.
12. Let stand for 5 minutes.

press ground meat in a pan its in place of a crust, add mozzarella, pepperoni, sauce, parm cheese and whatever else you like bake on 350 for about an hr........ delicious, I'm low carb also.

Use whole grain bread and low fat cheese with ham instead of pepperoni...... emmmmmmmmm sounds good
