Probably because of their fat content. Fat or sugar make things taste good.

the starchy releases a chemicle called amalase ( not sure of spelling) which is a stress releiving compound.
the levels of fat are tasty,

as far as a snack,
they are crisp, salty, and smooth ( if you are talking mc'ds fries)
some are crisp, and others are more mushy,,,,, in the same cup.
and the kechup is sweet, all four of the snack requisits.

well who doesnt like potatos...baked, fried, mashed, and even as a tasty bag of chips. plus you can add other delicious things to it like cheese, chili, ketsup, barbeque sauce, butter, sour cream, bacon, chives, and other seasonings...or my personal favorite, french fries and honey mustard sauce. YUM! i think anything bad for us that we can eat with other bad foods is why we like it so much (:

Cooks and chefs can prepare potatoes for eating in numerous ways: either with their skin on or peeled, whole or cut into pieces, and with seasonings or without. The only requirement involves cooking — to break down the starch and make them edible. Cooking potatoes also thouroughly breaks down the pyrithryns found in high concentrations in potatoes, with the largest concentrations being found in Russets. Because of the health risks consuming pyrithryns entails, including stomach discomfort, nausea, erosion of the stomach lining, and intestinal cancer, with prolonged consumption of poorly cooked potatoes, one should not eat potatoes raw. Most end-consumers eat potatoes hot, but several basic potato recipes involve cooking the potatoes and then eating them cold — potato salad and potato chips (or "potato crisps"). One of the most common presentation methods involves mashing potatoes: peeling, boiling, then mashing and mixing with butter, cream, or other seasonings before serving.

Other presentations or dishes may see potatoes baked whole; boiled; steamed; cut into cubes and roasted; scalloped diced or sliced and fried (home fries); grated into small thin strips and fried (hash browns); grated and formed into dumplings, Rösti or potato pancakes; and cut into long, thin pieces and fried or baked (French fries, called "chips" in the UK). Potatoes, unlike many foods, can also be easily cooked in a microwave oven and still retain nearly all of their nutritional value, provided that they are covered in ventilated plastic wrap to prevent moisture from escaping—this method produces a meal very similar to a baked potato. Potato chunks also commonly appear as a stew ingredient.

French fries may contain a large amount of fat (usually saturated) from frying and from some condiments or topping. Some researchers have suggested that the high temperatures used for frying such dishes may have results harmful to health . In the United States about ¼ of vegetables consumed are prepared as French fries and are believed to contribute to widespread obesity when trans fats are present. Frying French fries in beef tallow, the traditional but recently discarded McDonald's recipe, adds saturated fat to the diet. Replacing tallow with tropical oils such as palm oil simply substitutes one saturated fat for another. Replacing tallow with partially hydrogenated oil reduces cholesterol but adds trans fat. fat makes the metabolism and digestion goes weaker and slower, it breaks into ur body and creates carbon monoxide with very small amount, your blood atoms which consists of active iron "fe++" in order to attract O2 molecule "oxygen" also attracts and combines with carbon, it satisfies your blood, that's why you love the feeling after you eat it.

it depends also on food associates.. the United States, hamburgers.
In France, grilled steak: steak-frites.
In the United Kingdom, fried fish: fish and chips.
In Belgium, steamed mussels: moules-frites.
In Germany, curried sausage: Currywurst

some foods when associated when french freis makes alcohol inside your stomach, very small amount, you don't feel it but you feel "happy" and search for the feeling french friesgives you with that associate ie of such assocites are some very famous to have with french fries: Ketchup, Vinegar, Coca !
