I need a recipe for plain Vanilla cake (If details are needed, just ask)

VANILLA CHIFFON CAKE

1 c. sifted all-purpose flour
1/2 c. sugar
1 1/2 tsp. baking powder
1/4 tsp. salt
4 eggs, separated
1/4 c. vegetable oil
1/4 c. water
1 tsp. vanilla extract
1/2 tsp. cream of tartar
1/2 c. sugar

Combine flour, 1/2 cup sugar, baking powder and salt in small mixing bowl. Make a well in center; add egg yolks, oil and water and vanilla. Beat at high speed 5 minutes or until satin smooth.

Combine egg whites (at room temperature) and cream of tartar in a large mixing bowl. Not made of plastic. Beat until soft peaks form. Add 1/2 cup sugar, 2 tablespoons at a time. Beat about 4 minutes at medium speed until stiff peaks form. Peaks should stand straight up when beaters are lifted.

Pour egg yolk mixture in a thin stream over entire surface of egg whites, gently folding mixture, into whites. Pour batter into ungreased 10" tube pan, spreading batter evenly with spatula.

Bake at 325 degrees for 1 hour or until cake springs back when touched lightly. Remove from oven, invert cake in pan, and cool completely before removing from pan.

INGREDIENTS:

3 tablespoon margarine

2 cups granulated sugar

4 egg yolks

4 egg whites beaten until stiff

1 ½ cups of milk

3 cups all-purpose flour

1 teaspoon of vanilla extract

3 teaspoon baking powder



PREPARE:

Butter and flour a 9-inch spring form pan.

Preheat the oven to 350 °F. Butter and flour a 9-inch spring form pan.

Sift the all-purpose flour with the baking powder.

In an electric mixer, on medium speed, beat the margarine, granulated sugar, vanilla extract and egg yolks until well mixed.

With the machine running slowly, add the milk and the sifted flour. Beat for about 4 minutes or until batter is well mixed.

Shut down machine and manually mix in the beaten white eggs into the batter.

Pour the batter into the prepared pan.



BAKE: for about 40 minutes, or until a toothpick inserted in center comes out clean.

Cool the cake for 15 minutes. Remove the sides of the pan and cool completely.

PREPARATION:
Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.

Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

Spiced Pumpkin Muffins
I make these around Halloween and Thanksgiving, when a pumpkin theme is called for. I buy a large can of pumpkin to make a pumpkin pie so I will have an excuse to make these muffins, but they are so good you can make them without an excuse.

Ingredients:
1/3 cup butter or margarine, softened
1 cup brown sugar
2 eggs
1 cup pumpkin puree (homemade or canned)
1/4 cup milk
2 cups flour
2 teaspoons baking powder
2 teaspoons cocoa
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon ground cloves
1/4 teaspoon salt
1/4 teaspoon baking soda
1/2 cup coarsely chopped walnuts



Directions:
Preheat oven to 350 degrees F.


In a large bowl cream butter with brown sugar. Beat in eggs, then pumpkin puree and milk.


In a small bowl combine flour, baking powder, cocoa, spices, salt and baking soda. Add to the creamed mixture. Stir in walnuts.


Spoon into muffin tins that have been greased or lined with paper muffin cups.


Bake for 20 to 25 minutes.

French Vanilla Cake
(I hope this is the recipe you are looking for)

1 c butter
2 c sugar
6 md eggs
2 c flour
1 tsp. baking soda
1 c buttermilk
1/2 c vegetable oil such as crisco oil

Frosting:
1/2 cup butter
1 cup coconut
1 (8 oz.) cream cheese
1 cup pecans, ground fine
1 box powdered sugar

Cream butter and sugar until fluffy. Add eggs, one at a time and mix. Add flour, baking soda and buttermilk; mix well. Add oil. Bake in layer cake pans for 40 minutes @ 350 until done. Frosting: Mix all ingredients together well and frost cake.

you can use any frosting if you don't like this one

White Buttermilk Coconut Cake

1 cup butter (do not use margarine!)

2 cups sugar

1 cup buttermilk

3 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon cream of tartar

1/2 teaspoon salt

1 teaspoon vanilla extract

6 egg whites, stiffly beaten

Cream butter, add sugar gradually, creaming continuously.

Mix dry ingredients together in separate bowl.

Alternately add buttermilk and dry ingredients to butter mixture.

Add vanilla and fold in stiffly beaten egg whites.

Bake in 9 x 13 pan at 350° F. for 40 minutes (do not overbake).

Never Fail White Icing

3 egg whites

2 1/2 cups sugar

1/2 cup water

1/2 teaspoon cream of tartar

1 teaspoon baking powder

1 can of coconut

Boil 2 cups of sugar with 1/2 cup of water and 1/2 teaspoon cream of tartar until syrup threads.

Beat egg whites, 1/2 cup sugar and baking powder.

Slowly add syrup, beat until desired consistency.

Spread over cake.

Sprinkle coconut on top.

Plain White Cake Recipe

1 cup butter (vegetable shortening could be used instead of butter) + enough butter to butter pan

2 cups Organic sugar (non organic sugar could be used instead of the organic)

7 egg whites (beaten until stiff)

2/3 cup lowfat milk

3 cups unbleached sifted flour (enriched white flour could be used instead of unbleached flour) + enough flour to flour baking pan

1 tsp. Baking powder

1 tsp. Pure Vanilla

Beat egg whites until stiff and set aside. Cream sugar and butter, blend in egg whites and add 2/3-cup milk. Add flour and baking powder. Mix well. Spoon batter into greased and floured 13x9 baking pan or 2- round cake pans. Bake at 325 degrees for about 20-25 minutes or until cake tests done.

buy a box..they are 75 cents....its hardly worth making your own
