Spinach Pie

"A quick and easy lunch or light dinner. Frozen spinach may be used in place of fresh."

INGREDIENTS:
1 recipe pastry for a 9 inch double crust pie
1 tablespoon olive oil
1 onion, finely diced
1/2 pound fresh mushrooms, sliced
2 bunches fresh spinach, washed, stems removed
1 pint part-skim ricotta cheese
1/2 cup grated Parmesan cheese
1 egg, beaten
salt and pepper to taste

DIRECTIONS:
Preheat oven to 350 degrees (175 degrees C).
Heat a skillet over medium heat. Add olive oil, then onions. Saute onions until soft, about 5 minutes. Add mushrooms and saute 5 minutes more, stirring occasionally. Add spinach and cook just until wilted, about 1 minute.
In a large mixing bowl combine ricotta, parmesan, and egg. Mix well, then add spinach mixture. Stir thoroughly. Add salt and pepper to taste.
Spread mixture into pastry-lined pan. Cover with second circle of pastry. Trim and seal edges. Cut steam vents in top.
Bake in preheated oven for 35 to 45 minutes, or until crust is golden brown.

FRIED MEAT PIES

1 pound Ground Beef
2 hard cooked eggs, chopped
1 medium onion, chopped
1 T bacon or salt pork drippings
1 10-1/2 can broth
1/4 teaspoon each thyme and oregano
2 teaspoons fresh parsley, chopped
4 cloves fresh garlic, thinly sliced
3/4 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon garlic powder
2 T flour
2 T red wine
Pastry for two crust pie

Prepare the pie crust in advance and refrigerate. Allow to come to room temperature for 20 minutes before attempting to roll out. Or use prepared pie dough.

Saute the onion in bacon drippings (you can substitute olive oil if you're watching your cholesterol).

Add ground beef and cook until lightly browned. Add thinly sliced (or chopped) garlic and other herbs and wine. Sprinkle with flour (Wondra flour works well here). Add broth and simmer 10 minutes. Add the chopped egg and allow mixture to cool.

Roll pie dough out into 6 inch circles. Put 3 Tablespoons of the meat mixture onto one side of the circle, fold pastry over the meat and pinch sides together forming a half circle. Moisten the edges of the dough before sealing with a little water. Fry the turnovers in deep shortening or salad oil heated to 360 degrees a few at a time for about 3 minutes until golden. Add a little water to the remaining meat mixture. Heat and stir until a sauce-like consistency and serve over the pies. Makes six servings.

My dad said his favorite pie was the one in front of him! I don't make pies because I cannot get the crust right. My sis is the best around though.I eat it alone it is so great. IF I can find her recipe I will attach it later.There was an auction sat for a boy with cancer. Her Italian Cream cake went for $250 in this small town.The majority of our county know her for her baking.I do candy and puddings instead.We had a family reunion this weekend and she made a pecan,pumpkin, and buttermilk(like a chess) that was awesome! CHERRY CHEESE PIE

12 oz. cream cheese
1/2 c. sugar
2 eggs
1/2 tsp. vanilla
1 jar Musselman's cherry pie
filling (you can just use fruit, but it won't be as sweet)
1/2 tsp. vanilla
3 tsp. sugar
1 jar sour cream

Cream together the cream cheese, sugar, eggs and vanilla. Spread the cherry pie filling in the bottom of a pie plate. Save 2 tablespoons for the top. Pour the cream cheese mixture over the cherry pie filling. Bake at 350 degrees for 30 minutes.

Mix the following ingredients: vanilla, sugar and sour cream. When the pie is finished baking, spread the topping mixture on the pie with the 2 tablespoons of cherry pie filling in the center. Bake at 350 degrees for 5 minutes. Chill in the
refrigerator.

mix two small boxes jello cheesecake pudding with half the milk usually used to make pudding.

in a separate bowl mix one small box chocolate pudding with half the milk required to make pudding.

Crush 10 Dulce DE leche oreos in a Ziploc bag and sprinkle on a graham cracker crust. then top with half the cheesecake pudding, then all the chocolate, then the rest of the cheesecake pudding. you can decorate with more crushed oreos.

Be sure to use cold milk (canned is okay but chill first) and save the plastic cover from the store bought graham cracker crust because once inverted it becomes the lid. Refrigerate til you get hungry for a slice.
