Oats is probably the best thing to have for breakfast, its high quality, slow release carbohydrates that are low in fat.
Protein wise: Chicken Breast, Lamb, Danish extra lean Bacon, Eggs (the white part has the protein), protein shakes (with soy milk or fat free milk). Tuna steak is really low in fat and really high in Protein.
Carbs: try simple starches, like Potatos and other root vegetables like carrots. Avoid processed carbs like white bread, they just make you fat.

Ok, you want to eat lots of starch containing foods for the carbs. Breads, rice, cereals, potatoes (mostly your "white" foods). Any meat will provide protein. Another alternative is a large bottle of Nitro-Tech sold at GNC. This is formulated specifically for that purpose. Good luck.

If you want to gain muscle mass, you need to eat 1-2 grams of protein for every pound you weigh each day (no more than 40 grams at a time).
