Both of our parents seem to take great offense to this even after almost 4 years of us dating and doing so and in public people do double takes and seem to get angry what gives? Its only a joke?We love each other and may get married.

if you two are o.k. with it that is fine and i see no problem with it, but to be sensitive in front of your parents or elders, maybe you should not do it in front of them, be aware of their feelings especially if you are in their home, try to remember that one day you may be facing this situation from the other side....... :)

While you may mean it in an affectionate way, these names (except for latina) are still racist terms and carry derogatory connotations. Would you call anyone in his family a "guido" to their face? Would you want him calling your mom a "sp*c" to her face?
Other people hear you insulting each other and get upset that you would be with someone who puts you down. It is also disrespectful to other people - just because YOU don't mind the name, doesn't mean other people like hearing nasty names floating around. You're insulting them by extension by using the word.
You may mean it in a loving way, but it's still the same as calling each other stupid or fat or whatever. Some jokes are funnier than others, and some get old real fast.
Why not switch to some cuter and sweeter nicknames? Like you could be "hot tamale" and he could be your "Italian stallion." Or you could both be "latin lover."

For some people, sp*c or ginny are looked at as racial slurs, and inappropriate. Personally, I think it's kind of immature, and I hope that you will respect each other's parents and refrain from using those words when they are around.

It's cute in private but you're saying these that may offend people around then its not so cute anymore. However, you all have the right to call each other whatever you want and the people walking by rolling there eyes have just as much right to be annoyed.

In their day, these things were great offenses. Luckily, in
the Good Old U.S, of A., we are slowly getting over these petty things, like hating over name-calling.
It is really just immaturity to do it, or get offended by it. And the younger generation is trying to dissolve the pain by being
humorous with it.

Because you are using racial slurs as terms of affection. It just shows your immaturity and ignorance. If you want to do it while you two are alone, then go ahead, but why would you want to offend your parents, who if they are Latin, were probably called Sp*c when they were younger and it was not a term of affection. You should respect your parents and understand that racism is not something you should joke about.

Their anger comes from jealousy of not having someone to exchange cute names with. Just feel sorry for them that something so trivial riles up their emotions.

Don't give a sh*t about what your parents think about the way you call each other. If they do say something about it, tell them sternly it is none of their damn business.
