One opener. one sauce pan and a can of Heinz or for a cheaper alternative, stores own brand. Seriously though make up 1-1/2 pints of chicken stock or beef stock and add about 3 ounces of each of the following veg all diced small carrots, swede, celery, onions, potatoes and the same for peas and beans. A small amount of pasta can be used, season to taste. Simmer for about 1-1/2hrs stirring occasionally. This is a cheap and easy way and is more like a Spring veg soup.

Creamy Vegetable Soup.
INGREDIENTS
1 onion, chopped
1/4 cup butter, melted
3 sweet potatoes, peeled and diced
3 zucchini, chopped
1 1/2 cups fresh broccoli, chopped
3 (14 ounce) cans chicken broth
2 potatoes, peeled and shredded
1/2 teaspoon celery seed
2 teaspoons salt
1 teaspoon ground cumin
2 cups milk
DIRECTIONS
In a slow cooker stir together the onion, butter or margarine, sweet potatoes, zucchini and broccoli. Pour in the chicken broth and stir. Add the potatoes, celery seed, salt and ground cumin and stir.
Cover and cook on low for 8 to 10 hours. Add the milk and cook for 30 minutes to 1 hour. Serve.

Look for the kids book "Stone Soup" - it's wonderful, and kids can follow the recipe with the "secret" ingredient! Lots of fun!

Here's one that I make a lot. It makes a huge pot of soup.

Chop an onion and 3 stalks of celery, and mince 3 cloves of garlic. Cook them in a tsp of oil until the onion softens. Add 3 chopped carrots, 2 diced potatoes, 1 chopped zucchini, 1/4 head of chopped cabbage (or a bag of coleslaw mix), Fill the pot with water to cover the veggies, plus an extra 2-3". Throw in a half teaspoon each of dried thyme and dried rosemary and 2 bay leaves. Let the whole thing boil for 20 minutes, then add a can of whole or diced tomatoes. Cook it for another half hour, add salt, pepper, and 1/4 cup chopped parsley and it's done!
