How do I format a cell in Excel to show a number begining with zero? For example, 052677.

Set up the "CELL' to show leading zeros.

Put a single-quote when entering the number. It will treat the number as text, though. You can also force the cells to Text format (not Number format), this will have the same effect.

If you want all numbers to be the same number of places with zeroes at the beginning if they are short, you can use Custom format with format like "00000" (as many zeroes as you want the number to be long).

You can use an apostrophe to convert the cell contents to text. So type

'052677

in the cell and it should retain the zero.

However, if you then want to use the number for functions, that's a bit harder. Although you could try typing

="052677"

It still might not work for functions, but it's worth trying.

you could format your cells/ variety utilising custom Numbers format 0000000 and the type on your variety stay as Numbers yet alway displayed in 7 digits with maximum advantageous zeros.

one way to do it.
highlight the cell
format cell
select "Custom" under 'number' tab
under 'type: ' box, type in required number of zeros and see the sample text box change
