I'm in charge of breakfast @ work tomorrow. So far I'm filling those little 'cake shells' with fruit and topping with cool whip - but what's something small & easy that I can bring with that?

mini bagels and cream cheese you could get a couple different flavors. I usually get bagels from panera and they slice them up 4 me and ever last bagel will get eatn.

VANILLA CAKE





We use this recipe to make flavored cakes.

If you use this recipe with no additions, you make a vanilla cake.



INGREDIENTS:

3 tablespoon margarine

2 cups granulated sugar

4 egg yolks

4 egg whites beaten until stiff

1 ½ cups of milk

3 cups all-purpose flour

1 teaspoon of vanilla extract

3 teaspoon baking powder



PREPARE:

Butter and flour a 9-inch spring form pan.

Preheat the oven to 350 °F. Butter and flour a 9-inch spring form pan.

Sift the all-purpose flour with the baking powder.

In an electric mixer, on medium speed, beat the margarine, granulated sugar, vanilla extract and egg yolks until well mixed.

With the machine running slowly, add the milk and the sifted flour. Beat for about 4 minutes or until batter is well mixed.

Shut down machine and manually mix in the beaten white eggs into the batter.

Pour the batter into the prepared pan.



BAKE: for about 40 minutes, or until a toothpick inserted in center comes out clean.

Cool the cake for 15 minutes. Remove the sides of the pan and cool completely.

Here is a recipe that I take to work. People think I'm gifted and it is so simple!

HASH BROWNS BREAKFAST CASSEROLE

3 c. croutons
1 1/2 c. bulk sausage, browned and drained
2 c. milk
1 can cream of mushroom soup
2 lb. bag frozen hash brown potatoes, thawed
2 c. sharp Cheddar cheese, shredded
4 eggs, well beaten
3/4 tsp. dry mustard
1/2 c. milk

Place croutons in 9 x 13 inch pan. Top with 1 1/2 cups of cheese and the sausage. Cover with mixture of eggs, milk and mustard. Refrigerate overnight. Mix mushroom soup with milk and pour over the top. Cover the potatoes and top with 1/2 cup cheese. Bake at 300 degrees for 1 1/2 hours or at 325 degrees for 1 hour.

I hate the fruit and cake shells with cool whip already ! Pastries are not so great for breakfast. Can you just bring something simple like bagels and cream cheese, croissants and sliced fruit, apple fritters? donuts? toast and sliced cheese? Specialty breads are wonderful

Mini Bagels and cream cheese spreads-you know the blends like lox and cream, onion and cream etc also fresh cut up fruit is always a favorite.

If you are going for healthy I would say cottage cheese always goes good with fruit. If you just want something easy I say bagels.

How about a small cheese plate for those who don't want cake, or prefer something savory to sweet?

fruits
crackers & cheese
grapefruit juice?
mini pancakes/waffles w/ syrup
scrambled eggs w/ some sausage or bacon or ham

Little pigs in blankets( sausages wrapped in pancakes), or crepes, western scramble wraps.
