Pan trout is a cooking reference to the size of the fish meaning a fish roughly the size of the bottom of your pan - 9-14 inches. This is also roughly the approved catch size at most lakes - handy right. If you are interested you can try the recipe from field and stream at the link below. It also works well with talipia if you find trout too "fishy" and prefer a milder more perch or halibut taste.

Just rainbow trout and it is prepared in a pan, as opposed to the oven or grill. Trout is really good, but some places serve trout with the skin on. I definately suggest staying away from skin on pan trout.
