What they said...but please make sure that you have a "sugar pumpkin." It's NOT the size of the pumpkin that determines that--these are actually two different species. The other kind is only meant to be decorative, and they taste awful.

Buy your pumpkin from a farm where someone knows the difference. People in a supermarket will make up an answer a lot of the time, and it's too much work to cook a pumpkin that you can't eat because you picked the "jack-o'-lantern" kind by mistake.

Slice it in half, remove stringy pulp and seeds, turn cut side down on greased cookie sheet, bake until soft probably about 45 minutes depending on size of pumpkin. Scrape out cooked pumpkin meat and discard peeling. Small pumpkins taste the best. Large ones make the best jack-o-lanterns. Or you can peel raw pumpkin and cut in pieces and boil like for mashed potatoes.
Use cooked pumpkin for pies, puddings, or a vegetable side dish. Season with pinch of salt, sugar, butter, cimmamon, cloves, yum-yum.

If you're starting from scratch, you need a sweet pumpkin for cooking. Easiest way to cook it is in the microwave. Pierce it first and then place on microwaveable tray. Cook on high and keep checking by piercing for softness. When done, split open and remove seeds and scoop pumpkin meat from shell.Proceed with adding suggested spices in the recipe you are using.

I'm a good cook, with quite a lot of experience. Making pumpkin for pumpkin pies is AWFUL.

Buy it in a can, save a lot of trouble and mess, and the outcome is sure better.

Same with catsup, awful stuff to make when Heinz is cheap

The best and easiest thing to do is buy canned pumpkin either with seasoning or with out.

You can cook pumpkin in a bunch of tasty different ways but remember never ever boil pumpkin. it ruins the flavor and kills the texture.
