I will major in German and possibly double major in either French or Linguistics...do you think learning linguistics would be more valuable (financially and for personal pleasure) or learning another language?

I don't know how it will help you financially, but studying linguistics will let you see the world ina different way! Learning about languages is as interesting as learning a new language, maybe more. As you dive into the world of languages, you'll be fascinated to see how the system works and how every piece of language is a world of wonders.

I'd advise you to study linguistics. But meanwhile you can learn another language. And as you study linguistics, you will start to look at "language" in a more critical way and that would help you in learning languages.

And learning about languages (which is what linguistics offers) is not that hard if you're really interested in it.

Linguistics is invaluable to study if you are interested in language itself (as I am--I took several linguistics courses at university and I loved them). However, if you plan to use your fluency in other languages as part of another career (such as in politics) then speaking French would probably help you out more in the long run.

If that's the case, still take some linguistics courses!

I study english literature and I love linguistics, although it might sound boring to others...In my opinion try to learn both, French can be very helpful and is a wonderful language to learn.

No, learning Linguistics is not incredibly hard. There's not much money in it, but it is incredibly rewarding.
