Hopefully in October you can't or shouldn't, unless you're planning to surprise your guests. Yuuuummmm 2 month old cake. I'm sorry I just couldn't resist. The cake is the easy part, the decorating will take the talent. Draw out on paper what you'd like to see on top and make a list of what you need and start collection add-ons now, if you can find them. Good Luck, Merry Christmas

Buche de Noel ...a french christmas cake....beautiful presentation..(similar to making a jelly roll)

The Buche de Noel is made to represent the christmas yule log..

INGREDIENTS
2 cups heavy cream
1/2 cup confectioners' sugar
1/2 cup unsweetened cocoa powder
1 teaspoon vanilla extract
6 egg yolks
1/2 cup white sugar
1/3 cup unsweetened cocoa powder
1 1/2 teaspoons vanilla extract
1/8 teaspoon salt
6 egg whites
1/4 cup white sugar
1/2 cup confectioners' sugar for dusting
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Line a 10x15 inch jellyroll pan with parchment paper. In a large bowl, whip cream, 1/2 cup confectioners' sugar, 1/2 cup cocoa, and 1 teaspoon vanilla until thick and stiff. Refrigerate.
In a large bowl, use an electric mixer to beat egg yolks with 1/2 cup sugar until thick and pale. Blend in 1/3 cup cocoa, 1 1/2 teaspoons vanilla, and salt. In large glass bowl, using clean beaters, whip egg whites to soft peaks. Gradually add 1/4 cup sugar, and beat until whites form stiff peaks. Immediately fold the yolk mixture into the whites. Spread the batter evenly into the prepared pan.
Bake for 12 to 15 minutes in the preheated oven, or until the cake springs back when lightly touched. Dust a clean dishtowel with confectioners' sugar. Run a knife around the edge of the pan, and turn the warm cake out onto the towel. Remove and discard parchment paper. Starting at the short edge of the cake, roll the cake up with the towel. Cool for 30 minutes.
Unroll the cake, and spread the filling to within 1 inch of the edge. Roll the cake up with the filling inside. Place seam side down onto a serving plate, and refrigerate until serving. Dust with confectioners' sugar before serving.

Here are my two fav recipes

250 g sultanas or thompson seedless grapes
250 g currants
75 g cherries, halved
150 g whole-wheat flour
150 g unsalted butter
150 g sugar
1/4 teaspoon cinnamon
1/4 lemon, zest of
3 eggs, beaten
1/4 cup brandy
25 g jam or jelly (I use Mixed-Fruit jam; use your favourite flavour)

Combine fruits and brandy, dredge with half of the flour, and allow to stand 2 hours or overnight.
Preheat oven to 350 degrees F (180 degrees C).
In a large bowl, cream butter, sugar, lemon zest till fluffy.
Add beaten eggs slowly and whip to form peaks.
Now add the rest of the flour and mix well.
Fold in the brandy-fruit mixture.
Turn into a greased cake tin and bake at 180C (350F) for 1 1/2 hours, or until cake tests done with a toothpick.

2 cups sugar
1/2 cup oil
2 eggs (well beaten)
2 teaspoons vanilla
4 cups coarsly diced peeled apples
1 cup chopped nuts
1/4 cup raisins
2 cups flour
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons cinnamon
Frosting Glaze
4 tablespoons butter
1 cup sugar
2 tablespoons corn syrup
4 tablespoons cream
1/4 teaspoon ground cardamom

mix sugar, oil, eggs, Vanilla, apples, nuts, and raisins.
mix well and add flour, salt, soda and cinnamon.
pour into a 9x12 greased+ floured pan.
Bake at 350 for 1 hour.
Frosting Glaze: mix butter, sugar, corn syrup, cream and CARDAMOM.
bring to boil/remove from heat and spread on cake after cake is cool.
