Here are my two fav recipes

250 g sultanas or thompson seedless grapes
250 g currants
75 g cherries, halved
150 g whole-wheat flour
150 g unsalted butter
150 g sugar
1/4 teaspoon cinnamon
1/4 lemon, zest of
3 eggs, beaten
1/4 cup brandy
25 g jam or jelly (I use Mixed-Fruit jam; use your favourite flavour)

Combine fruits and brandy, dredge with half of the flour, and allow to stand 2 hours or overnight.
Preheat oven to 350 degrees F (180 degrees C).
In a large bowl, cream butter, sugar, lemon zest till fluffy.
Add beaten eggs slowly and whip to form peaks.
Now add the rest of the flour and mix well.
Fold in the brandy-fruit mixture.
Turn into a greased cake tin and bake at 180C (350F) for 1 1/2 hours, or until cake tests done with a toothpick.

2 cups sugar
1/2 cup oil
2 eggs (well beaten)
2 teaspoons vanilla
4 cups coarsly diced peeled apples
1 cup chopped nuts
1/4 cup raisins
2 cups flour
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons cinnamon
Frosting Glaze
4 tablespoons butter
1 cup sugar
2 tablespoons corn syrup
4 tablespoons cream
1/4 teaspoon ground cardamom

mix sugar, oil, eggs, Vanilla, apples, nuts, and raisins.
mix well and add flour, salt, soda and cinnamon.
pour into a 9x12 greased+ floured pan.
Bake at 350 for 1 hour.
Frosting Glaze: mix butter, sugar, corn syrup, cream and CARDAMOM.
bring to boil/remove from heat and spread on cake after cake is cool.

carribean christmas cake

1/2 lb butter, softened
1 cup sugar
2 tablespoons browning sauce (helps to darken the cake, especially if you don't use dark rum in the cake) (optional)
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon salt
4 large eggs
1 cup dark rum (brandy can be substituted, as can red wine)
1/4 lb mixed peel
1/4 lb cherries
1/4 lb mixed nuts (unsalted) or nuts, of your choice
1/2 lb prunes, chopped
1 lb raisins
1 freshly grated lime, zest of (or lemon)

Preheat oven to 325F; spray a nine-inch cake pan with nonstick cooking spray and set aside.
In a mixing bowl, beat together the butter, sugar, vanilla and browning until soft and creamy.
In a separate bowl, sift together the dry ingredients.
In a third bowl, beat the eggs with the rum.
Add egg mixture to butter mixture and thoroughly combine, then stir in zest, fruit and nuts.
Fold in flour mixture; do not overbeat.
Put batter into prepared pan and bake in preheated oven for approximately 90 minutes, or until cake tests done; may need longer.
Remove cake from pan when cool.

here are two easy ways to make a nice holiday cake. Easy Black Forest Cake. bake a chocolate cake mix according to directions. When the layers are cool take a can of cherry pie filling and some cool whip and put half the can of pie filling between the layers and on the top of the cake add the rest of the pie filling. put a cup of the cool whip around the top using a pastry bag or if you dont have one fill a 1 quart freezer bag and clip the corner off and pipe it around the top leaving the center open so you can see the filling. Serve with cool whip if desired. 2. Mix a white cake mix according to package directions. take a can of cherry or any kind of pie filling you like and put in the bottom of a 9x9 pan. (cherry and blueberry work the best) pour the cake batter over the pie filling and bake. when its cool for 10 minutes place a large serving tray over the pan and gentley flip it over.(its like pineapple upside down cake. Serve with whip topping. 3. bake a white cake according to package directions. in a bowl mix any flavor of jello you like. but instead of using 2 cups of water use one cup boiling water and 3/4 cup ice crushed or very cold water. let jello set until its slightly thick. take a large fork like a BBQ fork or serving fork and poke holes in the cake still in the pan.9x9 or 8x9 work well. pour the jello over the top. put cake in fridge to chill when its well chilled 2 hours is good. Frost the cake with Cool whip or any whip topping. Its delicious.

Top this with Cherry Pie Filling

OLGA's CHEESECAKE:
Graham cracker crumbs
1 lb. small curd cream-style cottage cheese
(use as dry a cream-style variety as possible)
2 (8 ounces) packages cream cheese, softened
1 1/2 cups sugar
4 eggs, slightly beaten
1/3 cup Argo cornstarch
2 Tablespoons lemon juice
1/2 cup margarine, melted
1 (16 ounces) pint sour cream
Grease 1 (9-inch) spring form pan; dust with graham cracker crumbs. Preheat oven to 325 degrees.
Sieve cottage cheese into large mixing bowl.
Add cream cheese. Beat with high speed of electric mixer until well blended and creamy. Beating at high speed, blend in sugar, then eggs. Reduce speed to low.
Add cornstarch, lemon juice and vanilla. Beat until blended. Add melted margarine and sour cream. Blend with low speed. Pour into prepared pan.
Bake in 325 degrees (slow) oven about 1 hour and 10 minutes or until firm around edges. Turn off oven.
Let cake stand in oven 2 hours. Remove and cool completely on wire rack. Chill. Remove sides of pan.Makes about 12 servings.
