What is the obsession of salt and pepper? Is it really a flavor requirement, a must have flavor on all foods or is it a creature of habbit because its just there and you really don't need it? Is there a salt and pepper conspiracy to force you to buy it?

The history of food is really interesting. Since there was no refrigeration way back when, salt was used to cure food. Pepper and other spices were used to cover up the taste of rotten food so it was edible. And our ancestors got used to the taste of them. Therefore, S&P on the table.

It's not always a requirement, but it's a courtesy to your dinner guests to have some sort of seasoning available. Salt & pepper just happen to be universally accepted because they're mild. But even if you're the world's most confident cook, it's still polite to have it on the table. If someone's dining @ your house & they need to add a little something to their food, having seasoning on the table saves them the embarrassment of asking for it. :)

It isn't, and isn't found on my table. I have a salt and pepper shaker in my home for those who would prefer to use it. I am confident in my cooking and know it tastes best when prepared. When someone asks me for them, I say, "sure, but please, taste the food before you put it on by habit, it really doesn't need it. I feel people that add salt and pepper to their food typically do it out of habit. Start to take notice when you eat with people if they ever taste the food before adding S&P, or anything else, hot sauce, soy sauce. It would seem it is a liking for the additive, not the food with the additive on it.

so that people can season their food to their liking.

You do not need to buy it but if you have guests over they may not like the taste of your food without it. Usually smokers will use more salt and pepper than non smokers because their taste buds are less sensitive.

It is nice to let your guest choose at what level of seasoning they would like their food to be at. If you do not let them have this choice are you not then conspiring to force them to eat at a level of seasoning only you have chosen?

first of all you do need it. next time your sweating in the gym taste a little bit of it. Its kinda salty. Thats sodium being depleated from your body. The human biology needs a certain level of salt to work and be healthy. As far as it being "required" on tables, thats not true. It just so happens to be good on food.
