Rice Pudding

1 c Rice, uncooked
1 Cinnamon stick
2 1/4 c Water
1/2 c Sugar
1 ts Salt
1 tb Flour
1 c Milk
3 Eggs


Instructions

Cook 1 cup rice with a cinnamon stick in 2 1/4 cups of water until very soft and rather dry. Mix 1/2 cup of sugar with 1 tablespoon of flour and 1 teaspoon of salt. Add 1 cup of milk gradually and three beaten egg yolks to the sugar mixture. Add to rice, stirring constantly, if too thick add more milk and then cook until done. Beat 3 egg whites stiff and pour hot rice mixture into them. Sprinkle with cinnamon.

Follow this my dear, and I guarantee you will NEVER buy an already made Rice Pudding again.
3.5 C Milk
1/2 C Sugar - divided
1 Cinnamon stick
1/2 C long grain rice
2 Egg yolks
1/2 C Heavy Cream
1 t vanilla extract

Heat the milk, 1/4 C of the sugar and the cinnamon stick in a heavy bottom saucepan just to the boiling point. Stir in the rice and reduce the heat to low.
Cover and simmer about 40 minutes being careful not to scorch bottom.
Whisk together the egg yolks, cream, vanilla and the remaining 1/4 C sugar in a small bowl.
Stir this mixture into the rice pot and bring to a boil. Cook, stirring constantly for an additional 2 minutes.
Remove cinnamon and pour into a shallow GLASS baking dish *8x8 or 9X9)
If desired, you can sprinkle with additional cinnamon or leave that to the individual serving.
Let it cool and thicken for 30 minutes.
Good warm, but better the next day
Besides having a home made desert, your home will spell terrific.

I think I'm gonna head out for some cream and cinnamon sticks now :-) You've got me craving my own cooking.

This is an old-fashioned creamy rice pudding, baked, with no eggs.
INGREDIENTS:
1 quart milk, scalded
1/4 cup long grain rice
1/4 cup granulated sugar
1/2 teaspoon vanilla
PREPARATION:
Preheat oven to 300°. In a 1 1/2 quart baking dish, combine all ingredients. Bake for 2 1/2 hours, stirring every 20 minutes. This will give the pudding a creamy texture.

Pineapple Rice Pudding

2 cups cooked rice
2/3 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla
2 cups crushed pineapples, well-drained
1/2 cup miniature marshmallows
1/2 cup whipped cream, whipped

Combine rice, sugar, salt and vanilla.
Add pineapple; chill 1 hour.
Add marshmallows and fold in whipped cream.
Chill until serving time.

I find boil the rice first,I cook mine in the oven,add sugar milk, vanilla sprinkle with some cinamon,put it another bowel of water under the dish you are cooking it in.cook in a slow oven stiring accasionally,for about an hr on 150%C.Yummy it will so creamy

try double portion of condensed milk, an extra portion of milk, one portion of evaporated milk and two cups of rice on two cups of water, half a cup of sugar, some cinamon and clove. SAvor it and perhaps add some milk or sugar according to your taste. You will like it.
