here's the basic recipe;
2 cups water
1 cup granulated sugar
2 cups dark corn syrup
1/4 teaspoon salt
1 teaspoon maple flavoring
3 tablespoons butter (optional)

Combine the first four ingredients in a saucepan over medium heat.
Stir occasionally, until the mixture comes to a full boil; let it boil for 7 minutes.
Turn the heat off and let the syrup cool for 15 minutes.
Add the maple flavoring and stir.
When completely cool, transfer the syrup to a covered plastic or glass container.

Here's a yummy variation:

1 1/2 cups corn syrup
1 cup maple syrup
1/2 cup water
1/2 cup sugar
2 cups walnut pieces

Combine corn syrup, maple syrup, water and sugar in a saucepot.
Bring to a boil, stirring occasionally.
Reduce heat and simmer syrup until it begins to thicken, about 15 minutes.
Stir in nuts; cook 5 minutes.
Ladle hot syrup into hot jars, seaving 1/4-inch headspace.
Adjust two-piece caps.
Process 10 minutes in a boiling-water canner.
Yield: about 4 half-pints.

Noooooo! Do not make fake maple syrup! It's a crime against nature. Even if you have to buy your real maple syrup at WalMart [they do sell it in the hot cereal aisle], please don't try to replicate that wonderful taste with extract and God-knows-what.

Maple syrup is one of the few products left that has to be made the old fashioned way to be authentic...; collecting the sap at a very specific time of year, in the very limited parts of North America where the conditions are right--and then boiling it down to make syrup. No additives...just the same process for hundreds of years.

The fakes can't replicate the light and thin texture of the real thing because they're loaded with commercially produced junk like corn syrup. Accept no substitutes. Maple syrup is one luxury most can afford. Treat yourself. You deserve the best.

In New England and Quebec maple trees are tapped in early spring while there is still snow on the ground . The days get longer ,warm up a bit and the sap starts flowing.
The traditional formula was 40 gallons of sap boiled over 1 cord
of wood = 1 gallon of syrup
Today there are less expensive and more efficient ways of reducing the sap, But the 40:1 ratio remains.
Now you know why the real thing is so expensive

During the sugaring season which lasts from late February to early April, find a sugar maple at least 12 inches in diameter. You will need some basic tools and equipment to collect the sap, and then comes the boiling process when you boil off the water in the sap and concentrate it to create the sweet syrup. basically you tap a maple tree, about now that is in the Autumn when the sap is running. once you get all the sap you need make sure that you filter it a couple of times and bring it all to a boil. keep boiling it until you get syrup. you need 40 gallons of sap to make 1 gallon of syrup.

Get a corkscrew and a bucket. Drill a hole in your maple tree with the corkscrew, put the bucket beneath. Put the maple drainage into the bathtub and bathe in it once a day for 3 months. Add a little vodka once every 4 days. Then every time you have pancakes go into the bathroom with a ladle.

once you get the sap from a maple tree, all you need do is boil it down to syrup.
