I used to tell my children to act self-assured, even if you're eating with your fingers. Put your napkin in your lap, not tucked into your collar. If you order wine, the server will offer you a drop for your approval. Take a sip and roll it around in your mouth before swallowing, then nod. Don't cut up your roll with a knife, pull it apart with your fingers and butter one piece. Most well bred people hold their knife in the right hand and fork in the left to cut up food. They keep the fork in the left hand and slide food on with the knife. If there is anything you don't understand on the menu, ask the server for recommendations. Act self-assured.

What kind of prestigious restaurant do you mean?
Different cuisines have different rules of etiquette and customs. For general good manners, read a book by an etiquette advisor, like Emily Post or Letitia Baldridge.
