If you are referring to the skinny skin tab that hangs down in the middle of the back of your mouth it is the uvula. The tonsils are rounder and off to both sides of the uvula in the back of your mouth.

Its called the 'uvula'... people often mistake it for the tonsils which are next to it, but the tonsils dont hang that much.. :)
