The best thing is to make gravy with them.

Giblet Gravy

1/2 cup butter, melted
1/2 cup all-purpose flour
1 teaspoon salt
4 cups hot chicken broth
1 chicken giblets, cooked and chopped (gizzard, liver, heart)
4 hard-boiled eggs, chopped

In a saucepan, on low heat, combine the butter, flour and salt until smooth.
Add the chicken broth.
Mix well.
Add the giblets and eggs.
Cook, simmering and stirring constantly, until thick.
Pour in a gravy boat and serve!

Take the neck, gizzard and any extra fat and skin from the chicken (I usually trim it off before cooking) and put in a medium size saucepan. Simmer until about 30 minutes or till cooked through. Clean the meat from the neck bones, remove the skin and chop the gizzard fine. Set aside. Thicken this broth by whisking in flour or cornstarch to make gravy. Return meaty bits to pot and add salt and pepper and any other seasonings you like, to taste. I usually don't add the liver as it gives the broth a funky taste. But you can saute the liver in a little butter and eat it - very good!

There are a number of recipes which use giblets. If a bird is to be stuffed, the giblets are traditionally chopped and added to the stuffing. If not, they can be used for other purposes, such as giblet pie. The liver is not usually included in these recipes, as its strong flavor tends to overpower other ingredients. It may be used in liver-specific recipes, such as pâté or yakitori.

Much poultry, especially that sold in supermarkets, is quartered and consequently the giblets are not included. Giblets can be bought separately from a butcher, but the demand for human consumption is low in most Western countries, so they are more often sold to pet food manufacturers.

Duck or Goose Giblets .. I'm sure Chicken too :-)
450g (1lb) Rump Steak
1 Onion
1 Bunch Savoury Herbs
½ tsp Whole Black Pepper
Plain Crust

Clean and put the giblets into a saucepan with an onion, whole pepper and a bunch of savoury herbs.
Add just over a pint of water and simmer gently for about 1½ hour.
Remove the giblets, let them cool and cut them into pieces.
Strain the liquor.
Line the bottom of a pie dish with a few pieces of rump steak.
Add a layer of giblets and a few more pieces of steak.
Season with salt and pepper, pour in the liquor.
Cover with a plain crust and bake for rather more than 1½ hour in a brisk oven.
Cover a piece of paper over the pie, to prevent the crust taking too much colour.

Time: 1½ hour to stew the giblets, about 1 hour to bake the pie.
Sufficient for 5 or 6 persons.

The giblets make a great pan brown gravy. I use all the giblets and give everything other than the liver to my cat and dog. The gravy is delicious.

You should boil them and you can add them in either the dressing or the gravy. Turkey gibblets are good too for this. Thank you.

Boil them up in the pan you are using to make the gravy in, once they have cooked through strain them and either throw them, eat them (well, the chicken's liver is quite nice, the rest bin) or give them to your dog to munch on if it likes them (the boneless parts).
