During mass when The Lords Prayer is said do you strech your arms out (I think the name for this is the Orans Posture) or do you hold hands with the person near you, or do you fold your hands, or something else? Do you think it's alright to stretch your arms out?

I prefer the Orans posture but if someone wants to hold hands I hold hands.

The ancient monuments of Christianity, such as the tombs in the catacombs, often show someone in the Orans position praying to God.

There is much discussion on whether either the Orans posture or holding hands is legitimate during Mass. The current General Instruction of the Roman Missal (GIRM) does not mention the posture of the congregation during the Lord's Prayer.

Any of the options you mentioned are acceptable. It is a matter of personal preference.

Christ is not sacrificed "again" during the Mass. The sacrifice of Christ was once and for all time, which has always been the teaching of the Catholic Church (you would know this if you did a little basic reading instead of just repeating rumors you heard). However, Christ didn't want His sacrifice to become something of folklore, an ancient story passed on from generation to generation, but not a real part of the Church's present day reality. That is why He instituted the Mass at the Last Supper, and then commanded those present, the first priests of His Church, to do the same thing in remembrance of Him. The Holy Sacrifice of the Mass is the response of His Church in obedience to that divine command. In the Mass, we do exactly what Christ did at the Last Supper, just as He commanded us to do, so that His once and for all time Sacrifice might become present and tangible to all people in all times and places. Does your church obey this direct command from the mouth of God Himself? If not, why not?

I hold my family's hands if I'm with them, or fold my hands when I'm alone. People who stretch their hands out give me the heebie jeebies for some reason.

Its ok. I don't do it, and I don't like holding hands either. Hands folded or arms crossed (usually I am cold) is my typical position.

It is not right to do the mass at all, you can't sacrifice Christ again. His sacrifice was once and for all.
