An easy variation on the basic vanilla cake recipe

175g (6oz) margarine or
softened butter
175g (6oz) caster sugar
3 large eggs
150g (5oz) self-raising
flour, sifted
50g (1¾oz) of cocoa, sifted
1tsp baking powder
1tsp vanilla extract
pinch of salt

For simple chocolate icing

100g (3½oz) of dark chocolate 100g (3½oz) of chopped butter
1. Heat the oven to 180C (gas mark 4). Lightly grease an 18cm (7in) round cake tin with a little extra butter or margarine and cut a piece of greaseproof paper or non-stick baking parchment to fit the base of the tin.
2. Put all the ingredients in a large mixing bowl and beat with a wooden spoon or a hand-held mixer for 1 minute, or until just combined. It's important not to beat the batter too much just long enough to make it smooth.
3. Pour or spoon the mixture into the tin, smooth the top and bake on the middle shelf of the oven for about 45-50 minutes. The cake is cooked when it looks well risen and golden; the top should spring back when lightly touched with a fingertip. Another test is to insert a skewer into the centre of the cake - it should come out clean.
4. Let the cake sit in the tin for 5 minutes, then gently run a knife around the edge and turn the cake out onto a wire rack to cool.
5. For the icing, place the dark chocolate and chopped butter in a heatproof bowl and set over a saucepan of very hot water until melted. Cool for 15 minutes, then spread over the top of the cooled cake.

This recipe is tried and test by three generations of my family and it never fails. 6oz self raising flour, 8oz caster sugar, 2oz coco powder, 8oz of soft margarine (we always use stork) 4 eggs. The important part is to cream the marg and sugar until it becomes as pale as possible,This can be done in a food processor, using an electric whisk or by hand. Once the sugar and marg are pale add the sieved coco and flour with beaten egg a little at a time incorporating as much air as possible. Pour into 2 lightly greased 8 inch tins and cook on gas mark 5/180 until cake has risen, check at about 35-40minutes by piercing with a fine knife or sweker if it comes away clean then it is done. Stick together using chocolate butter cream or jam, sometimes I put fresh strawberries in the centre and cover the whole thing with ganache, cream whipped into a paste by adding melted chocolate. Yum!!

Boxed Cake mixes are very easy and also quite good.
Here's a tip to add some pizazz to a chocolate cake: instead of adding water per the directions on the box, use cold, strong coffee, preferably espresso. Boosts the flavor of the finished cake. Also, if you make chocolate frosting that calls for water, use coffee as a substitute there too.

Chocolate Sheet Cake
Mix together and set aside
2 cups flour
2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
In a saucepan mix
2 sticks oleo
1 cup water
3 tablespoons cocoa
heat until butter melts and is bubbly. Then pour over flour mixture and beat.
Then add 2 eggs
1/2 cup buttermilk
1 teaspoon vanilla
Pour into sheet cake pan (cookie pan) and bake for 15-20 min. Remove from oven.
Icing:
Mix together in saucepan and bring to a boil.
1 stick oleo
4 tablespoons cocoa
6 tablespoons buttermilk
Then beat in 1 box powdered sugar
1 teaspoon vanilla
Pour over cake and enjoy

Tastiest chocolate cake, ever! (Bit expensive, but worth it!)

Syrup: 200g sugar, 1 cup water.
Cake: 140 g flour, 2 tbl spoons baking powder, pinch of salt, 250 g butter, 100 g sugar, 200 g dark chocolate, 5 eggs, 2 tbl spoons brandy, 200 g chocolate (with nuts), 2 tbl spoons milk.

Heat sugar and water until boiling point, let it cool completely.

Butter a cake pan. Sift flour, baking powder and salt. Preheat oven to 350 ºF. Melt butter, sugar and dark chocolate over pot with hot water. Add it to a separate mixing bowl, beat eggs into mixture one at a time. Add brandy and mix again. Fold mixture into flour. Add to pan and bake 40 - 45 minutes. Take cake out of oven and pour the syrup over it. Let cake cool in pan. Melt chocolate (with nuts) with milk (you can add a bit more milk) over low heat. Place cake on plate and pour chocolate over cake.

MAYONNAISE CHOCOLATE CAKE

2 c. flour
1 c. sugar
2 tsp. baking soda
4 tbsp. cocoa
1/4 tsp. salt
1 c. water
1 c. mayonnaise
1 tbsp. vanilla

Sift dry ingredients into a large bowl. Add the water and beat 1 minute. Add the mayonnaise and beat 1 minute. Add the vanilla and beat 1 minute.
Pour into a greased and floured pan, 13 x 9 inch square for a very high cake. Sprinkle with chopped nuts and chocolate bits for a dandy frosting. Bake at 350 degrees for 35-40 minutes.

Use a basic all-in-one Victoria Sandwich mix (using soft marge) and add 2 tablespoons COCOA mixed to a paste). Never use drinking chocolate - it's nowhere near as good.

Easy Chocolate Mountain Cake Recipe

This easy chocolate cake recipe turns into a special occasion cake with its fabulous frostings: buttermilk and two toppings. One frosting is caramel or sweet milk icing, the other is chocolate fudge to make the elegant Chocolate Mountain Cake a chocolate lovers dream come true.
INGREDIENTS:
1 C. butter or margarine, softened
2 C. sugar
3 eggs
3 C. all-purpose flour
1 C. buttermilk
1/2 C. warm water
3 T. cocoa
1 tsp. baking soda
1 tsp. vanilla
PREPARATION:
Cream butter; gradually add sugar, beating at medium speed with electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition. Add flour alternately with buttermilk, beginning and ending with flour.
Combine water, cocoa and baking soda, stirring well. Slowly add to the flour mixture, beating well. Stir in vanilla and pour batter into well-greased and floured 9" cake pans.

Bake at 350 degrees for 35-40 minutes until toothpick comes out clean. Cool in pans 10 minutes. Remove from pans and cool completely on wire racks. Spread Sweet Milk Frosting between layers, on top and on sides.

Caramel Frosting or Sweet Milk Frosting

1 C. butter
2 C. sugar
1 C. evaporated milk
1 tsp. vanilla

Melt butter in heavy saucepan over medium heat. Add sugar and milk, cooking mixture over medium heat until mixture reaches soft ball stage (234 degrees).

Remove from heat and add vanilla (do not stir). Cool for 10 minutes. Beat with electric mixer for 10 minutes or until thick enough to spread. Spread immediately on cooled cake. Then, top with Chocolate Fudge Frosting.

Chocolate Fudge Frosting

2 C. sugar
1/4 C. cocoa
1/2 C. shortening
2/3 C. milk
1 T. Kayo corn syrup
Pinch of salt


Put in heavy saucepan and bring to boil. Boil for exactly 2 minutes. Take off stove and add 1 teaspoon vanilla flavoring. Put in mixing bowl and mix about 5 minutes or until it gets thick enough to put on cake. This cake is spectacular when finished. Use 100% real flavorings to make it elegant and delicious.

If you want something easy just get one of those kits where you just need to add an egg or whatever. So good. It's all weighed and measured for you so it's sooooo easy.
