Put the fresh herbs in the bottle of olive oil and let it seep, My guess is that it would take at least a week for the olive oil to be well-flavored with the herb

Hello, my husband who is a french chef in Hong Kong says this is very simple, take a bottle of Olive Oil and put a large handful of fresh herbs inside - you could make a mix of Thyme, Rosemary & Bay Leaves or perhaps slice 2-3 cloves of garlic in two and fry them in bit of olive oil then add to oil with a large handful of fresh Oregano & Basil for an Italian flavour.
For best results, its good to warm the oil first on a low fire for 4-5 mins before adding the herbs, pour back into the bottle or Jar.
For a spicy oil like what pizzerias put on their tables, you just need to add a handful of dried chillis and dried peppercorns in different colours - the longer you keep it, the more spicy it will get.
There are so many variations you can try, also playing with different spices such as cumin seeds, cardammom or caraway seeds for more exotic flavours make a nice suprise in a salad or when drizzled onto grilled veggies!
You should have a good infusion after about 3 weeks but you can pretty much keep it indefinately.

You can't fuse the oil and the herbs. You can, however, infuse he oil with the herbs. YOu put the herbs in the bottle with the oil.

Just drop some herbs into the oil and leave it for a day or two. the herbs will impart their flavor to the oil.

Can either place the herbs in the oil in a decanter, or cook them together, poof they are fused.
