Does anyone know a good way of roasting pumpkin seeds??? I had some when I was younger and now I'm craving some!

Difficulty: Easy
Prep Time: 5 minutes
Cook Time: 15 minutes
Yield: 1 1/3 cups

1 1/3 cups pumpkin seeds, cleaned and rinsed
2 teaspoons garlic powder
1 teaspoon salt
1 teaspoon crushed red pepper
1/2 teaspoon black pepper

Preheat the oven to 350 degrees F.
Spray a baking sheet with nonstick cooking spray. Combine the pumpkin seeds with the garlic powder, salt, crushed red pepper, and black pepper on prepared baking sheet and toss to combine. Bake for about 15 minutes, or until seeds are crispy and light golden brown. Remove from the oven and stir with a spatula or wooden spoon to release any seeds that have stuck to the baking sheet, and cool completely before serving.

Roasted seeds will keep in an airtight storage container for up to 1 week.

Cook's Note: recipe may be scaled up proportionately.

Cleaning Pumpkin Seeds

1. Scoop out the seeds and pulp from the pumpkin.
2. Place in colander.
3. Under cold running water, remove the seeds from the pulp and strings.
4. Pat dry with a clean kitchen towel.


Roasting Pumpkin Seeds

1. Preheat oven to 300.
2. Combine 1 T oil or melted butter plus ½ t salt per cup of seeds. If you like, you can add other spices like pepper, paprika, and/or garlic.
3. Toss seeds with oil mixture until well coated.
4. Spread evenly on a cookie sheet.
5. Bake until golden, about 30 minutes, stirring occasionally.
6. Let cool on paper towels.


Roasted pumpkin seeds make a great snack and can also be added to soups and salads.

1 1/2 cups pumpkin seeds
2 tsp. melted butter or oil (olive oil or vegetable oil work well)
salt to taste
Options To Taste:
garlic powder
cayenne pepper
seasoning salt
Cajun seasoning blend




Preheat oven to 300° F.

While it's O.K. to leave some strings and pulp on your seeds (it adds flavor), clean off any major chunks. Toss pumpkin seeds in a bowl with the melted butter or oil and seasonings of your choice. Spread pumpkin seeds in a single layer on baking sheet. Bake for about 45 minutes, stirring occasionally, until golden brown.

I start with clean seeds (no pumpkin stuff on them) and then dry them off.

I mix, in a bowl, a little butter and some soy sauce.

Give the seeds a quick toss and put on a cookie sheet, sprinkle with sea salt (because I like sea salt better than table salt, and kosher salt is to large a grain), and cook in the oven at 350 for 20 minutes.

I just made about 6 cups of roased pumpkin seeds. I slow cooked mine on 250. It took a while. probably 2 hrs. but I feel they crisp and cook all the way through.
recipe
2 cups seeds
1 1/2 TB butter
Salt
stir about every 15 min.

get all the goop off
spread them on a cookie sheet in a single layer and sprinkle with salt
put them in the oven at 350 for 20 min.
